Ingredients:

Rhubarb – 350 gram
Egg – 1 large
Egg yolk – 1 egg
Golden castor sugar – 100 gram
Vanilla extract – 1 teaspoon
Sweet short crust pastry – 350 gram
Carton single cream – 284 ml
Plain flour – 1 teaspoon

Ingredients For The Toppings:

Demarara sugar – 50 gram
Ground ginger – ½ teaspoon
Melted butter – 50 gram
Porridge oats – 50 gram

Instructions On How To Prepare The Recipes:

Step 1

Take rhubarb and cut into bite size pieces. Place a frying pan on heat and add half the amount of mentioned sugar. Transfer the rhubarb pieces into sugar after. Warm until all the sugar has melted. Next, transfer the rhubarb into a big bowl with the juice and leave so as to cool.

Step 2

Set the oven at 180 degree Celsius.

Take the pastry and roll into thin pieces. Use the rolled pastry to line a flat tin which is deep and loose based. Line it with grease paper and then allow to bake for some 20 minutes or until the pastry turns golden in color and remains no longer raw.

Step 4

Add egg and egg yolk into a bowl and beat with vanilla, flour and the remaining caster sugar. Add cream and whisk again. Now place the rhubarb into the already prepared pastry case and then pour the cream prepared on top of it.

Step 5

Increase the temperature of the oven to 200 degree Celsius and then bake the rhubarb mixture for about 20 minutes or until your find the custard very lightly set and only a thin skin on top of it.

Step 6

Take the toping ingredients and mix them together over the pie. Slide into the oven for 15 minutes more or until the crumble is turned golden and the custard starts wobbling out. Make sure that the final appearance of the pie should be its top risen and cracked as soon as you take it out of the oven. Serve warm to yourself first and then your family and friends.
