Delicious Balsamic Glazed Roasted Acorn Squash

This is a vegetarian dish and in this dish we cut the slices of the acorn squash, we mix it with the olive oil, salt, paprika and pepper, then we bake it in a preheat oven, we fry the celery, garlic, Chinese cabbage and served it along with the squash, we pour the balsamic glazed on the top of it and garnish it with the coriander leaves.

Cooking Time- 30 Minutes
Serves- 4

Ingredients:

Acorn squash- 600 gm
Olive oil- 1 glug
Rosemary- 3 sprigs
Garlic- 3 cloves chopped
Chinese cabbage- 1
Coriander leaves- 3 sprigs
Celery- 2 stalks
Mint leaves- 3 sprigs
Flour- 100 gm
Egg- 3
Soy sauce- 1 tablespoon
Balsamic glazed- 2 tablespoon
Salt- as per taste
Paprika- 1 teaspoon
Cream- 2 tablespoon
Pepper- 1 teaspoon

Methods Of Preparation:

Step 1

First take the acorn squash, cut it into half, now scoop out the seeds of it with the help of the spoon, now cut it into half moon shapes, do this for all the squash, now clean it with the water.

Step 2

Now take the baking tray, place the aluminium foil to it, now place the squash on it, apply olive oil to it, season it with the salt and pepper, add the paprika to it, now mix all the things and place this nicely. Now place this inside the oven at 180 degree celcius for about the 25 minutes.

Step 3

Now take the celery, chopped it nicely, take the Chinese cabbage, take out it leaves and chopped it into long pieces, crushed the garlic cloves and chopped it very fine.

Step 4

Now take the flour in the deep bowl, add the cold butter to it, now crumble the butter to the flour, mix all the things very well,  add the plenty of the pepper to it, now crack 1 egg in it, mix all the things very well, add little bit of the water to it, now make the smooth dough of it.

Step 5

Now take the dough, roll it as thin as possible, now place this on the hand, add 1 piece of the squash to it, now cover it with the flour and give it the same shape of the squash, now do the same for all of the squash, now beat 1 egg into the bowl, brush the squash with the egg, now take the firer, put it on the 160 degree celcius, now fry all the squash in it for about the 5 minutes one by one and take it out in the kitchen paper.

Step 6

Take the pan, put it on the medium heat, as the pan is hot, add the oil to it, fry the chopped garlic to it, now add the celery to it, as the celery are slightly soften, add the cabbage to it, fry all the things, now add the soy sauce to it, add the white mayonnaise to it and then cover the lid and cook it for about the 5 minutes.

Step 7

Now take the blender, add the mint leaves and the double cream to it, season it with the salt and pepper and make the smooth paste of it.

Step 8

Now take the serving plate, add the fried vegetables to the bottom of it, now add the baked acorn squash on the top of it, sprinkle the finely chopped coriander leaves on the top of it, take the balsamic glazed and mint paste, add this on the top of it. The dish is ready to eat.
