Recipe For The Delicious Chicken Enfrijoladas

This is the best street foods of the Mexico, in this we leave the beans in the salted water for some hours, then we fry the chipotle chili then we make the paste of the beans and chili, then we boil the chicken with the bay leaves, peppercorn, garlic, then we shred the chicken, we fry the tortilla, we dip it in the sauce, add the chicken in between and served it.

Serves- 3

Ingredients:

Bean from pot- 3 cups
Butter- 2 tablespoon
Olive oil- 1 shot
Onion- 1
Garlic- 3 cloves
Chipotle chili- 6
Corn tortillas- 5
Chicken- 400 gm
Mexican crema- 1 tablespoon
Salt- as per taste

Methods Of Preparation:

Step 1

First we take the pot, we add the water to it, now we take the red beans to it, season it with the salt and pepper, leave this mixture for about the 5-6 hours, now drain out the water from it.

Step 2

We take the bowl, we add the water to it, add the 1 clove of garlic, peppercorns, bay leaves to it, then we add the chicken to it, we add the salt to it, cover the lid and cook it for 30 minutes, now drain out the water, take the chicken, shred out the meat from it.

Step 3

Now take the chipotle chili, take out the seeds from it, now take the pan, add little bit of the oil to it, fry the chili, now take the jar, add the beans to it, with little bit of the broth to it, add the chili to it, make the smooth paste of it.

Step 4

Take onion, chopped it very fine, take the pan, add little bit of the butter to it, as the butter is melted add the onions to it, fry it, now add the chopped garlic to it, fry it, add the sauce to it and fry it for sometime.

Step 5

Now take the pan, add the oil to it, now fry the tortilla to it, now dip it into the fried sauce, now place this in in the serving plate, add the shredded chicken to it, now flip the tortilla and pour the sauce on it, add the Mexican crema to it. The dish is ready to eat.
