The main ingredient in this is the chicken. In this we make the fresh paste of the mango and then we marinate the chicken with the yogurt and the spices. Then we make the homemade mayonnaise and make the curry of the yogurt and the mango paste. Then we bake the whole thing and last we cook the long grain rice.

Preparation Time- 15 Minutes
Cooking Time- 40 Minutes
Salt- as per taste
Pepper- 1 teaspoon
Yogurt- 200 gm
Olive oil- 50 ml
Egg white- 1
Chicken- 500 gm
Rice- 200 gm
Oregano- 1 tablespoon
Paprika- 1 teaspoon
Curry powder- 1 teaspoon
Methods Of Preparation:
First we take the mangoes, peel them, cut it into the slices. Now take the blender blend the whole thing so that there will be a thick smooth paste of the mangoes pulp.
Now take the pan, put this on the low flame, now add little bit of the oil in it, as the oil it hot, add the brown sugar to it. Now mix the sugar in the oil, as the sugar in melted add the mango pulp in it, now stir it regularly. As the colour of the mango is changed to the dark brown then switch off the flame and take it out and cool down it.
Now take the egg white in the bowl, season it with the salt and the pepper. Now take the rape seed oil and mix it slowly while whisking the egg white, when you get the creamy foam stop the whisking.
Now take the yogurt in the big bowl, season it with the salt and pepper, add 1 teaspoon of the ginger and garlic paste in it, add 1 shot of the olive oil in it, now mix all the thing nicely, add the chicken in it and rub the mixture to the chicken. Leave it for some of the time so that the chicken will be marinate.
Now put all the things in the baking tray and keep it inside the refrigerator at 180 degree celcius for about the 20 minutes. Take it out and cut the whole chicken into the pieces.
Now take the yogurt in the bowl, season it with the salt and pepper, add the homemade mayonnaise in it, now add the paprika, curry powder and the oregano in it, mix all the things nicely. Now add the chicken pieces in it and at the last add the home made mango paste in it. Again mix the whole thing and transfer the whole things in the baking tray. Place it inside the oven at 150 degree celcius for about the 15 minutes.
Now take the long grain rice, wash it in the clean water. Now take the bowl add the water in it, now add little bit of the salt in it, add 2-3 drops of the olive oil in it. As it is hot, add the rice in it and cook the whole mixture for about the 15 minutes. Now as the rice is coming at the top drain out the water from it.
Now take out the curry from the oven and place this in the bowl, now in the serving plate add the rice. Garnish it with the fresh slice lime and the mint leaves. The chicken with the mango curry is ready to eat.
