Chicken Yassa With Coconut Rice

This is the traditional way of cooking the chicken yassa in the Africa, the cooking is so simple, it has no spice and it is totally healthy, in this we marinate the chicken pieces with the English mustard, lemon, garlic, we also marinated the boiled onions with it, then we fry both separately and then we mix it with the chicken stock and then we cook the rice in it and served it.

Whole chicken- 1
Onions- 7
Lemons- 4
Mustard- 2 tablespoon
Oil- 150 ml
Garlic- 2 cloves
Bouillons Cubes- 2
Black pepper- 1 teaspoon
Chili powder- 1 tablespoon
Rice- 200 gm
White wine- 100 ml
Parsley- 4 sprigs
Salt- as per taste
Chicken stock- 500 ml
Potatoes- 4 small

Methods Of Preparation:

Step 1

First you need to take chicken, clean it properly, now cut it into medium pieces, take the bowl, add all the pieces to it, now take the squeeze them so that all the water will come out from it, now take 1 tablespoon of the mustard oil, salt as per taste, pepper, peel finely chopped garlic, now marinate the chicken in it, take the clean foil and cover the bowl with it, now place this inside the refrigerator for about the 2 hours, for good taste leave it for a night.

Step 2

Now take the bowl, add the water to it, now put it on the low flame, add 7 half cut onions to it, now cover the lid and cook it for about 5 minutes, now take it out and cut it into thin slices, now put them in the bowl, add 1 tablespoon of the mustard and white mayonnaise, season it with the salt and pepper, add 1 tablespoon of the lime juice to it, now mix all the things.

Step 3

Now take the bowl, add little bit of the oil to it, now place on the top of the stove at the low flame, as the oil is hot, first take the garlic clove, then add this to the oil, now fry the garlic till it become golden brown, now take it out and place the chicken in it and fry it nicely. Now take it out in a separate plate.

Step 4

Now in the same pan, add the oil and then add the marinated onions to it, now fry it till it become slightly golden brown, now add the fried chicken in it, add the chicken stock to it, add the potato and the half cut lime to it, add the water, season it with the salt and pepper, cover the lid and cook it for about he 5 minutes, till the juice reduce to half of it.

Step 5

Now in another bowl, add water to it, now add the rice to it, now leave it for about the 2 hours, then drain the water and place the rice directly to the pan with some of the oil in it, now we add the white wine to it and leave it for sometime as the rice are messy slightly, remove it from the heat.

Step 6

Now add the rice to the chicken, mix it nicely, cover the lid and as the rice start coming on the top, then take it out on the serving plate, sprinkle fresh chopped parsley and rain the fired onions on the top of it, add 1 cube of the butter to it and served it. The dish is ready.
