The is delicious Mexican dish and in this the main ingredients if pork, we boil the garlic, chili, tomatoes, in the salted water and make the mixture of it, we add the fresh coriander it, we cook the pork in the salted water, with the garlic and onion, then we fry the pieces of the potatoes in oil, we fry the green sauce in the pan, we add the pieces of the pork meat, we add the potatoes and cook it for sometime, then we served it with the chopped coriander leaves.

Pork shoulder- 8 pounds
Garlic- 1 whole
Oil- 200 ml
Salt- as per taste
Pepper- 1 teaspoon
Guajillo chili- 2
Green tomatoes- 1 pound
Coriander- 1 handful
Garlic- 2 cloves
Methods Of Preparation:
First take the bowl, put it on the medium heat, now add the onions, garlic and chili to it first, boil it for sometime, now take the tomatoes and boil the whole mixture for 5-6 minutes, till the tomatoes get little bit of the soften. Drain out the water and put the ingredients in another plate.
Now take the pestle, add little bit of the salt to it, now add the garlic clove in it, add the boiled chili to it, now make the paste of it, take the blender jar, add this to it along with the tomatoes, now blend the whole thing to make the smooth paste of it, at last we add the fresh coriander leaves and blend it also.
Now take the bowl, add the water and salt to it, put it on the medium flame, add the onion to it, add the whole garlic to it, simmer it for sometime, now take the pork meat, take out the fat from it, now cut it into slices, add this to the mixture, the white foam will come out at the top just take it out, cook the meat for about the 2 hours.
Now take the potato, peel it and cut dice it into small pieces, now take the pan add the cooking oil in it, now add all of them in it, now fry the potatoes till it get the brown color, change the side of the potatoes and fry it.
Take out the meat in the bowl, shred it into small pieces, now take the pan, put it on the medium heat, now add the oil to it, add 2 cloves of garlic to it, fry it till it gets dark, then discard it, take the onion, cut it into thin slices, now add this to the oil and fry it.
As the onions are translucent we add the green sauce in it, fry it for sometime, keep on stirring regularly, now take the meat and add this to it, take the broth of the cooked meat and add little bit of it, add the fried potatoes in it as well. Leave the mixture for 15 minutes, so that the flavors get infused.
Now take out the meat in the serving bowl, take the Parmesan cheese and add this to it, add 1 cube of butter to it sprinkle the black pepper on the top of it, garnish it with the chopped coriander leaves, the dish is ready to eat.
