This is the delicious dish in this we have combination of so many things, we take out the meat of the crab, then we half cooked it, we make the white sauce of the butter, flour, milk, then we fry the chopped shallot and garlic, we add the fresh baby spinach to it and fry it, we prepare the mixture of the ricotta cheese, mozzarella cheese, parmiggiano cheese, lemon zest, spinach, crab, then we cut the pastry sheets and make the roll of it, then we bake it in the tin along with the white sauce and served it.

Pastry sheets- 200 gm
Garlic cloves- 3
Spinach- 200 gm
Olive oil- 2 tablespoon
Lemon- 1 teaspoon
Crab- 400 gm
Ricotta- 20 gm
Parmiggiano- 30 gm
Mozzarella cheese- 100 gm
Butter- 3 tablespoon
Flour- 3 tablespoon
Milk- 50 ml
White wine- 30 ml
Nutmeg- 1 pinch
Salt- as per taste
Pepper- 1 teaspoon
Methods Of Preparation:
Take the shallot, cut the top and the bottom, now chopped it very fine, take the garlic cloves, chopped it, take the lemon, get the zest of it, take the baby spinach, cut the leaves of it, clean it in the running water, now tap it with the kitchen cloth and make it completely dry.
Take deep bowl, put it on the low heat, add the butter to it, stir it regularly, so that the butter will get melted, now add the flour to it, stir it so that there will not be any lumps in it, cook it for 30 seconds, as the smell of the flour starts coming out from the mixture, add the white wine to it, now leave the mixture for about the 1 minute, stir it mean while.
Add the milk to it, as the bubble are coming from it, season it with the salt and pepper, now grate a pinch of the nutmeg to it, mix it, cover the lid and leave the mixture for about the 1 minute, now grate the parmiggiano cheese in it, so that mixture will have the creamy texture, now remove it from the heat and allow it to cool.
Take the crab, cut the legs of it, now cut the fingers of it by twisting it, now with the help of the scoop, take out the meat of it, now take the bowl, add little bit of the water to it, as the pan is hot, season it with the salt and pepper, now add the meat of the crab in it, cover the lid and cook it for about the 10 minutes, take out the lid, drain the water, allow it to cool and then shred the meat of the crab.
Now take the skillet, put it on the low heat, add little bit of the oil to it, as the oil is hot, add the mixture of the chopped shallot and minced garlic to it, stir it and fry it for sometime so that there will be a nice golden color, now add the spinach to it, slowly and carefully mix it with the shallot and garlic, now cover the lid and cook it for about the 5 to 6 minutes, so that the spinach will get tendered.
Take out the lid, now season it with the salt and pepper, mix it and stir it till the spinach will be tender to half of its volume, remove it from the heat and cool down it. Take the bowl of the mozzarella and ricotta cheese, now grate the parmiggiano cheese in it, now mix the whole thing, season it with the salt and pepper, add the zest of the lime, now carefully mix the whole mixture evenly.
Mix the spinach and crab meat to it, now carefully with the soft hands mix all the things nicely, so that the crab meat will not be broken,
Now take the pastry sheets, spread it on the table, now cut it in square of about the 4 inches, place the crab mixture on it, now roll it couple of times and place this to the plate, do the same process with all the crab mixture, now take the baking tin, pour little bit of the white sauce to it, spread it to the walls of it, now place the roll on it, pour the remaining mixture on it, place this inside the refrigerator at 180 degree Celsius for about the 15 minutes, now take it out and served it hot. The dish is ready to eat.
