Plain Flour- 250 gm
Icing sugar- 50 gm
Brown sugar- 100 gm
Butter- 200 gm
Salt- 1 teaspoon
Coffee water- 2 table spoon
Double cream- 100 ml
Water- 250 ml
Methods Of Preparation:
In the bowl add the brown sugar and butter mix it and then add the flour into it. Now with the help of the back of the spoon, just make the hard dough of this mixture. Now place this between the sheets of the butter paper and then roll it to make it thin and then place it inside the refrigerator.
Now its time to make the puffy recipe and for this you need to add the water in the pan and then add the butter into it with a pinch to salt and then make it boil at the low heat, first butter will melt and then water. Now as you 1/4 water is evaporate then add the 1 cup of the flour into it and then stir is so that there will be sticky lumpy paste will be there, now as you get the single lumpy dough just remove it from the heat.
Now take it out in the anther bowl and then crack one egg into it and then whisk and then again crack the another egg into it. Now do this process for the 4 eggs and then you get the creamy paste of it. Now take this into the piping bag and then cut it from the bottom and then take the baking tray with the baking paper on it and then make the small circle by pressing it, now make the 4 dots.
Now take out the film from the refrigerator and then cut out the small disk from it and then place these disks on the top of the paste of the dots. Now place this inside the oven at 200 degree Celsius for about 20 minutes so that it will bake nicely.
Now in the separate bowl take the double cream and then add the custard into it and mix it well now add the 2 tablespoon of coffee powder soaked in the water. Mix it so that the mixture will have the cream paste like consistency, this is thin that the earlier.
Now you need to place this mixture inside the refrigerator so that it will be cooled and thick enough to insert in the puffs. Now take out the puffs from the oven and then allow it sometime to cool. Now take the knife and then insert it from the bottom and then you need to make a cavity in this. Now take out your cream mixture from the mixture and then place it in the piping bag and then insert it in the puff and then fill the cream into the puff, now do this for all.
Now dust all the puff from the icing sugar and then place it inside the microwave just to make it slightly hot, take it out your puff is ready to eat.
