This is the delicious dish in which we have the goodness of the corn and richness of the guacamole and it is easy it cook at home. In this we roast the corn on the hot pan, we make the mixture of the melted butter, smoked paprika, salt and pepper, we rub it on the corn and roast it, we take out the seeds of it, we also chopped the scallions, cilantro and guacamole, mix it and make the smooth paste of it, we fry it and bake it along with the corn. Fresh corn- 2 ears
Cilantro- 40 gm chopped
Butter- 2 tablespoon
Smoked paprika- 1 teaspoon
Black salt- 1 teaspoon
Salt- as per taste
Pepper- 1 teaspoon
Methods Of Preparation:
First you need to take the long pan, put it on the low heat, now take the ears of the corn, clean it properly, tap it with the kitchen cloth, now take the lemon, rub it on the surface of the lemon, as the pan it hot, put the corn on it, change the side for sometime, roast the corn properly.
Take the pan, put it on the low heat, as the pan it hot, add the butter to it, melt it properly, take it out the bowl, add the smoked paprika, season it salt and pepper, mix all the things completely.
Take the scallions, chopped it very fine, take out the leaves of the cilantro, chopped it very fine, take the jalapeno, cut it into half, now with the help of the spoon take out the seeds of it, cut it into thin long slices, mix all the things together nicely.
Take the brush, apply the butter mixture on the corns to all the sides of it and again roast it, now take the guacamole, cut it into half, take out the seed of it, now again with the help of the spoon, scope out the guacamole in the scallions mixture.
Squeeze 1 lime to it, season it with the salt and pepper, with the help of the folk, press the guacamole into paste and mix all the things together, so that there will be nice thick paste of it, take out the corn from the pan, place it vertically to the bowl, now with the help of the sharp knife, take out the seeds of it in the bowl.
Place the guacamole mixture to the same pan and fry it for sometime, pour the butter mixture in it, now add little bit of the sour cream to it, when the smell of the guacamole is coming out from it, keep on stirring so that it will not get burnt.
Take a big bowl, add the corn in it, add the guacamole in it, now to give it a smoky flavor, cover it nicely with the silver foil, place this inside the oven at 180 degree Celsius for about the 10 minutes, take it out remove the foil and again place it in the oven. Take it out and in the serving plate, add little bit of the black salt on the top it, garnish it with the slices of the lemon and served it. The dish is ready to eat.
