This is the dish for the seafood lovers. In this we boil the chili and tomatoes, then we fry the onions in the garlic infused oil, then we mix it and make the paste of it, we mix it with the pesto, then we fry the the whole paste, we clean the scallops, season it, we take the tomatoes, onions and green pepper, marinate it in the pesto paste, we insert the skewers in it and then we grill the whole thing and served it with the mint sauce.

Preparation Time- 10 Minutes

Scallops- 500 gm
Fresh pesto- 100 gm
Cherry Tomatoes- 10
Lemon- 1 tablespoon
Mint leaves- 3 sprigs
Double cream- 20 ml
Basil leaves- 20 gm
Salt- as per taste
Pepper- 1 teaspoon
Methods Of Preparation:
First you need to take the red chili, put it in the bowl, put it on the low heat, now add the water to it, season it with the salt and pepper, add the tomatoes to it, cover the lid then cook it for about the 10 minutes, now take it out and then you will see the outer skin is coming out, care fully remove all the skin of the chili and the tomatoes.
Now take the pan, add the olive oil to it, now place 1 garlic in it, now fry the garlic in the oil, till it become dark brown, now take it out, now add the chopped onions in it, now fry the onions, now take the jar, add the chili, tomatoes and onions to it, now mix it to get the paste of it, now take out the paste to the same pan and fry it for sometime.
As the bubbles starts there in the pan, add the pesto to it, now mix it, remove it from the flame and allow it to cool, take the scallops, season it with the salt and pepper, now dip it inside the pesto mixture, take the onions, cut it into the size of the scallops, take the tomatoes and mix all the things and then dip it in the pesto mixture and leave it for about the 1 hour so that the mixture will get marinated, make sure that some of the paste should be remaining.
Take the grill pan, add little bit of the oil to it, now put it on the high heat and make it hot, now take the skewers, insert 1 onion slice first, then tomato, then onion, then scallop, then tomato and last add the onion, now repeat the process till all the mixture will be finished.
Drizzle little bit of the oil on the skewers, now put it on the grill, fry the whole thing for about the 2 minutes, from all the sides, now take it out and then do the same process for all the skewers.
Now take the basil leaves and the mint leaves, put it in the jar, add little bit of the olive to it, now make the smooth paste of it, now add the remaining pesto mixture to it, now take the folk and make the holes in it, now apply the mixture on it, sprinkle some chili flakes on it, take the serving plate and served it. The dish is ready to eat.
