This is the traditional way to making the Albondigas, in this we first marinate the ground beef and pork with the paste of the onions, garlic, peppercorns, all spice and cumin, we add the beaten egg and bread to it, then we boil the egg and wrap it with the meat, now we fry the guajillo and chipotle chili and make the salsa of it, with the roasted tomatoes and paste of roasted garlic, then we fry the whole thing and add the balls to it and served it.

Ground beef- 400 gm
Ground pork- 400 gm
Bread slices- 2
Milk- 1 cup
Boiled egg- 2
Garlic- 1 clove
Cumin- 1 teaspoon
All spice- 1
Salt- as per taste
Tomatoes- 400 gm
Guajillo chili- 5
Chipotle chili- 5
Chicken stock- 1 cup
Corn flour- 50 gm
Methods Of Preparation:
First take the pestle, now add the 1 clove of the garlic, add 1/4 piece of the onion, make the paste of it, now add the all spice, cumin, peppercorns to it, add little bit of the salt to it, now mix all the things and make the smooth paste of it.
Now take the bread slice, soaked it in the milk, beat 1 egg in the bowl, now take the pan, add the salted water to it, now place the eggs to it, cover the lid and boil it for about the 10 minutes, now take out the egg and remove the shells of it and cut it into quarters.
Take the pan, add the ground beef and ground pork meat to it, now add the onion mixture, bread and the egg, make the smooth and the creamy paste of it, now make the small balls of it.
Apply little bit of the oil on the hands, now take the ball, make it flat, place the quarter of egg on it, wrap the meat on it and keep it on the plate. Now take the pan, place the aluminium foil on it, now place the half of the onion, 2 cloves of garlic, and the tomatoes, put it on the medium heat and roast it from all the sides.
Now take the guajillo chili, cut it into slices, take out its seeds and veins, now take the pan, add little bit of the oil to it, as the oil is hot, add the guajillo chili to it, now fry it, do the same for the chipotle chili also.
Now add all the chili to the boiling water and as the chili are soften then take it out, now take the roast garlic and grind it in the pestle, now place this in the jar along with the chili and roast tomatoes, make the smooth paste of it, sieve the sauce to the bowl.
Now take chicken stock, add the corn flour to it, mix it nicely, now take the pan, add little bit of the oil to it, put it on the medium heat and place the sauce to it along with the chicken stock to it, boil it for about the 30 minutes.
Now transfer the salsa to the bowl, add the ball to it, leave it for 10 minutes, sprinkle fresh chopped coriander leaves to it, served it hot. The dish is ready to eat.
