This is the delicious Mexican main dish, in this we first take out the seeds of the Mexican chili, we fry it in garlic infused oil, then we cook it in the apple cider vinegar, we make the powder of the cumin, peppercorns, then we roast the bay leaves, oregano, cinnamon, then we mix all the spices with the chili and make the paste of it, we take meat of the beef and marinate it, we steam cook it in the dough seal pot, we add the puree of the roasted tomatoes to the curry of the meat and served it.

Beef meat- 2 kg
Loaded rib- 300 gm
Beef chest- 500 gm
Ancho chili- 3
Cumin- 1 teaspoon
Oregano- 1 teaspoon
Bay leaves- 2
All spice- 2
Garlic- 2 cloves
Pepper- 1 teaspoon
Parsley- 4 sprigs
Salt- as per taste
Methods Of Preparation:
Take take ancho chili, guajillo, morita and cascabel chili, then cut it from the middle vertically, take out all the seeds of it, now take the pan, add little bit of the oil to it, put it on the low flame, as the oil is hot, add 2 garlic cloves to it, now fry it till it become golden brown, take out the garlic from it.
Now in the pestle, add the cumin, peppercorns and all spices to it, grind all the things in it, now in the same pan, add all the Mexican chili to it, now fry it for sometime and keep on stirring, add the apple cider vinegar to it, cover the lid and cook it for 10 minutes, drain the water and take out the chili from it.
Take the garlic, crush it and peel it, take the onion, peel it and cut it into quarters, place the skillet to the medium flame, as the skillet is hot, add the cumin seeds, bay leaves, oregano, cinnamon stick and roast it, now take the blender jar, add the onions, garlic, all the chili, all the roasted spices in it, now add little bit of the apple cider to it, grind it to make the smooth paste of it, fry it on the skillet over the medium meat for about the 10 minutes.
Now take the beef meat, beef ribs and chest, now take the chili paste and marinate all the pieces in it, now place the clean foil on the top of it and leave it for over night, now take the jar, place the water in the bottom of it, now place the sieve plate on the top of it, now place all the marinated beef on it, add the paste on the top of it.
Now make the dough of the flour and water, now place it on the corners of the pot, cover it with the lid and seal it properly, place this inside the oven for about the 50 minutes, as the dough is hard take it out, remove the dough and take out the meat, shred the meat to the plate.
Take the skillet, place the aluminium foil on it, place the tomatoes to it, roast the tomato on it, now peel it and make the paste of it, now sieve the meat mixture, add the tomato puree in it, season it with the salt and pepper, mix it well.
Add the shredded meat to the serving plate, pour the tomato mixture on it, sprinkle the finely chopped parsley leaves to it and the dish is ready to served.
