Delicious Mexican Dish Cochinita Pibil

This is the Mexican dish prepare from the pork, in this we first make the paste of the achiote, oregano, cumin, all spices, pepper, cinnamon stick, garlic, onions in the pestle, then we take the pieces of the pork shoulder and we marinate it, then we cook the pork in covering with the tossed banana leaves, we also make the tortilla of the corn flour and fry the onions rings with oregano and chopped onions with the habanero chili, then we served all of this.

Serves- 4

Ingredients:

Achiote- 1 teaspoon
Oregano- 1/2 tablespoon
Cumin- 1/2 tablespoon
All spices- 6
Oregano- 1/2 tablespoon
Black pepper- 1 teaspoon
Cinnamon stick- 1
Garlic- 2 cloves
Cloves- 2
Onion- 1/2
Bitter orange- 4 tablespoon
Pork shoulder- 1 kg
Banana leaf- 2
Red onions- 1
Corn flour- 100 gm
Habanero chili- 2
Cold butter- 1 knob
Salt- as per taste

Methods Of Preparation:

Step 1

First take the achiote powder and mix it with the oregano, cumin, all spices, black pepper, cinnamon, cloves, now add all of this in the pestle, now make the powder to it, add the garlic to it and crushed it with the spices, add the finely sliced onions also make the paste of it, add water and the bitter orange juice to it to make it smooth.

Step 2

Now take the pork shoulder, cut out the fat from it, now take the sharp knife and cut it into big chunks of the 4 inches longs, place this in the bowl, now add the paste to it, rub it nicely on the pork.

Step 3

Take out the remaining paste of it in another bowl, now take out the paste from pestle by mixing the sour orange juice to it, now add this to the pork mixture and leave it for sometime.

Step 4

Take the pan, put it on the low heat, now place the banana leaves on it, now wait till it change its color to the bright, now place all of the leaves to the wall of the bowl, now place all the pork in it, now cover it with the leaves, add the water to it, close the lid. Place this on the low heat for about the 1 hour.

Step 5

Now take the onion and chili, chopped it very fine, mix it with the salt and the orange juice, take the onion again and make the thin rings of it, now add the hot water to it, drain the water, mix the orange juice, salt and oregano to it. Now take the small bowl  and fry both of them separately

Step 6

Now take the  corn flour, add cold butter to it, now mix it so that there will be breadcrumb consistency, now add the milk and make the smooth dough of it, now take out small ball from it and make the small tortilla of it, take the pan, put it on the low heat, place the tortilla on it and bake it from both of the sides.

Step 7

Now take out the pork meat, shred it nicely into small pieces, take the tortilla on the serving plate, add the pork meat on the top of it, now take the fried onions rings on the top of it and then to the one side add the chopped fried onions. The dish is ready to eat.
