Octopus dishes are so expensive and you will get it in the big restaurants, but here is the simple way to cook the octopus, we clean the octopus, remove the eyes and the teeth of it, then we boil the water, add the onion, garlic, carrot, celery, bay leaves, peppercorns to it, we curled the tentacles and then we cook it inside the water, we cut it and wrap it in the plastic bottle, we make the sauce of the mint leaves, egg, cream cheese and served the slices of the octopus with the mint sauce.

Ingredients:

Carrot- 1
Celery- 2 stalks
Onion- 1
Peppercorns- 1 tablespoon
Juniper berries- 7
Red wine- 2 tablespoon
Bay leaves- 4
Octopus- 1 kg
Egg- 2
Cream cheese- 50 gm
Mint leaves- 3 sprigs
Parsley- 3 sprigs
Garlic- 1 cloves
Olive oil- 1 tablespoon
Salt- as per taste
Pepper- 1 teaspoon
Lemon- 1

Methods Of Preparation:

Step 1

First you need to clean the octopus and this is the most important thing, give a cut mark to the head of the octopus, clean the head properly, now give a cut mark to the eyes of the octopus, now take it out, you will see a sharp teeth of it, now give the cut mark through out the teeth and take out the teeth of it, clean the octopus carefully.

Step 2

Take the onion, peel it, cut it into half, take the celery, peel it and cut it, peel the carrots, now put this in pan, add bay leaves, peppercorns, juniper berries, add the water to it, season it with the salt and pepper, add little bit of the vinegar to it, put this on the low heat and boil the whole thing for about the 5 minutes.

Step 3

As you see that the tentacles of the octopus are straight and you need to curled them, now grab the octopus from the head, dip the tentacles in the boiling water for 8-9 times, the tentacles will curled up, now leave the octopus inside the water and boiled it for about the 1 hour with the covered lid.

Step 4

Take out the octopus to the board, cut the heat into two equal parts, cut the remaining octopus into quarters, now take the 1 liter of the plastic bottle, cut the top of the part of it, now place the holes at the bottom of it, put this on the bowl, place the octopus inside it, make sure that the tentacles should be curled.

Step 5

Now press the octopus hard with the pestle, so that the liquid will come out from it, now cut the bottle vertically, press it hard so that the octopus, wrap all the things with the clean foil, place this inside the refrigerator for about the 6 hours.

Step 6

Take the egg white in the bowl, put the hand blender in it, ON it as medium speed till there are soft peaks on it, now add little bit of salt and the pepper, now add the cream cheese in the jar, add the egg in it, add the mint leaves to it, ON the mixture to make the smooth paste of it, last add the chili flakes to it.

Step 7

Take out the octopus bottle, remove the octopus, cut it into thin slices, served it on the serving plate, pour the mint mixture on the top of it, spread it, add the juniper berries to it and served it. The dish is ready to eat.
