For someone living outside japan, hearing such name for a recipe is rare but it is not the case in japan. The word Okonomiyaki refers to ‘okonomi’ i.e. “what you like” and ‘yaki’ i.e. “grilled”. Being invented in japan prior to World War II, it carries a special meaning and taste. Today’s Japanese people have developed several ways to prepare it or more precisely modified the recipe and have made it taste better and more delicious. It first came in Osaka but now it is served all over japan. Today, it comes in many variation i.e. Osaka or Kansai style and Hiroshima style. Although, all these variations have different recipes but to some extent all of them taste similar. Therefore, today you will learn about a popular recipe of Okonomiyaki that you will love it.
Preparation Time: 25 minutes
Cooking Time: 15 minutes
Serving: 4 person
1 cup of Okonomiyaki flour
2/3 cup of water
2 cup of eggs
4 cups of cabbage cut into small and thin strips
2 stalks of green onions sliced diagonally into thin pieces
¼ cup of tenkasu
6 strips of beacon cut into thin and small pieces
½ cup of raw shrimps but into thin pieces
½ links of cheese sausage
1 oz. of pickled ginger
Direction Of Preparation:
Take a large bowl and whisk in it the okonomi flour and water until it becomes smooth
Add cabbage, eggs, onions, shrimps, sausage and cabbage in the kneaded flour and mix. Make sure that you don’t over mix
Preheat a griddle to 200 degree C and oil it. Now add the above prepared okonomi mixture that is divided into two pancakes.
With the help of a spatula, flatten the pancakes to around 1.5 cm thick and around 30 cm across.
At the top of each pancakes, add bacon pieces. Wait for ¾ minutes and flip over the pancakes and cook for another 4 minutes.
Flip the pancakes again with bacon side up and cook for another 3 minutes. Cook until it becomes firm and well browned.
Now your Okonomiyaki is all prepared. With the help of spatula or some other tool, remove the pancakes to the plate. Drizzle kewpie mayonnaise, aonori, katsubushi and okonomi sauce from above.
