Corn flour- 300 gm
Butter- 1 knob
Salt- as per taste
Pepper- 1 teaspoon
Red tomatoes- 4
Green tomatoes- 4
Garlic- 3 cloves
Chicken- 200 gm
Lime juice- 1 tablespoon
Cumin powder- 1 teaspoon
Cilantro- 5 sprigs
Chili- 5
Oil- 50 ml
Cheese- 100 gm

Methods Of Preparation

Step 1

First you need to take the corn flour, now sieve it into the bowl, add little bit of the baking powder to it, now add the small cubes of butter to it, now crumble the butter to the flour, season it with the salt and pepper, now leave it for about the 30 minutes.

Step 2

Now add the milk to it and place this in the dough maker, now ON the machine at the very low speed, now add the water to it and increase the speed of machine and make the dough elastic, now roll it fast on the board.

Step 3

Now take out small part of it, place this inside the layers of the clean foil, now press the ball so that there will be tortilla of it, now take the pan, put it on the low heat, place the tortilla to it, now bake it from both the sides, till there will be nice brown dots, remove it from the pan, press the outer portion and make the walls on it, now crack the crispy portion of it.

Step 4

Now take the whole chicken, place it on the baking tray, now take the folk and make the hole on it, rub the butter on it gently, now take the bowl, add lime juice, cumin powder, little bit of the flour and melted butter, season it with the salt and pepper, now mix all the things.

Now take the mixture, rub it on the chicken and make the even layer of it, now place this chicken inside the oven at 180 degree Celsius for about the 30 minutes, take it out and shred the meat from the chicken and make the small pieces of it.

Now take the green tomatoes and the red tomatoes, cut the top portion of it, now put this inside the hot boiling water along with the green Mexican chili, cover the lid and boil it for sometime, take out the tomatoes, peel it and chopped it separately.

Now in the grinder jar, add the green and the red tomatoes separately, now add the garlic, dice onions and the chopped cilantro, make the smooth paste of it, now fry both the green and the red mixture separately.

Step 8

Now place the green sauce to the one tortilla and red sauce to the another tortilla, add the shredded chicken on both the tortilla with the grate cream cheese to it, sprinkle the chopped cilantro on the top of it. The Mexican street food is ready to eat.
