Sardines are delicious and it is loved by most of the sea food lovers, it is the main ingredient for most of the delicious recipes, here is the dish in which we make it sweet and sour, in this first we clean the sardines, make it flat, then we coat it in the flour, then we fry the chopped onions, we add the white wine, to it, then we make the layers of the sardines, onions and the raisins, peppercorns, last we make the top of the onions and bay leaves and bake it, served it into slices.

Sardines- 700 gm
White wine- 220 ml
Sugar- 1 tablespoon
Onions- 500 gm
Pine nuts- 50 gm
Olive oil- 3 tablespoon
Pink peppercorns- 10
Flour- 100 gm
Salt- as per taste
Breadcrumbs- 1 cup
Pepper- 1 teaspoon
Methods Of Preparation:
First you need to take the onions, peel it, cut it into half, then place this inside the bowl filled with the water, add the salt to it and leave it for about the 30 minutes.
Now take the sardines, cut the head from the fingers, insert the thumb in the stomach of the sardines and take out the stomach of it, remove the back bone of the sardines, spread the sardines, now clean it in the running water and tap it with the kitchen cloth.
Take the deep fry pan, add the cooking oil to it, put it on the medium flame, now take the flour to the bowl, season it with the salt and pepper, now mix it well, add all the sardines to it, coat the flour to both the sides of the sardines, place it directly to the hot pan and fry it till it become golden brown, take it out and place it to the tissue paper.
Now take the onions, cut it into thin slices, take the pan, put it on the low heat, add all the onions to it, cook it for about the 20 minutes, as the onions are translucent, raise the heat, add the sugar and salt to it, add the white wine vinegar to it, now leave it till the wine gets completely evaporates.
Take the boiling water to the glass, add the raisins and the pine nuts to it, now take it out and dry it completely. Take the baking tray, grease it with the butter, place the sardines to it, now make a thin layer of the onions on it, add the raisins, pine nuts and pink peppercorns to it, now make the layer the sardines, then onions, then nuts, repeat the process till the sardines are used completely.
At the top of the it, pour the juice of the onions, add all the remaining onions on it, now add the raisins, peppercorns place 2 bay leaves on top of it, cover it with the aluminium foil, place this inside the oven at 180 degree Celsius for about the 20 minutes.
Take it out, remove the foil, add the very fine breadcrumbs on it, now place it again to the oven at same temperature for about the 10 minutes, now cut it into slices and served it in the serving plate, enjoy this dish with the chili sauce, the dish is ready to eat.
