Guajillo chili- 6
Chipotle chili- 1
Chipotles canned- 2
Garlic- 3 cloves
Pork shoulder- 2.5 kg
Apple cider vinegar- 4 tablespoon
Bay leaves- 5
Pineapple- 200 gm
All spices- 2 teaspoon
Oregano- 1 teaspoon
Cumin- 1 teaspoon
Bread slices- 10
Ginger paste- 1 teaspoon
Methods Of Preparation:
First take the guajillo chili, cut it from the middle and take out the seeds of it, cut it into quarters, take the onions, cut it into slices, chopped the garlic, very fine, now take out 2 tablespoon of the chipotle chili.
Now take the pan, put it on the low heat, as the pan is hot, add the onions and garlic to it, add the bay leaves to it, now fry the whole things, as the garlic is golden brown, take out the bay leaves from it.
Now add all the chili to it and fry the whole, add the water and the apple cider vinegar to it, cover the lid and cook it for about the 5 minutes. Now take out all the things and place them in the bowl.
Now take the oregano, cumin seeds, peppercorns, all spices, cloves and place them in the pestle, now grind the whole things, add this to the jar along with the chili mixture, now make the smooth paste of it by adding the apple cider vinegar to it.
Take the pork shoulder, cut the milanesa from it, now cut it into very thin slice with the sharp or the electric knife, now season it with the salt and pepper, now apply little bit of the oil to it and leave it for sometime.
Now take the deep flat bowl, apply little bit of the chili mixture to it, now place the slice pork meat to it and make the layer, now apply the chili mixture to it and again apply the chili sauce to it, now repeat the process, till the meat get finished, cover the top with the clean film and place this inside the refrigerator for 1 hour.
Now take the grill, put it on the medium heat, as the pan is hot, place the slices of the pineapples to it, now place the meat also to it, grill it for 4 minutes to both the sides, grill all the meat to it, now place this to the plate and cut it into slices.
Now take the onions, cut it into thin slice, add little bit of the oil to the grill pan, fry the onions to it, now add the slices of the meat and pineapple to it, fry the whole things, now take the tossed bread slices and place the mixture to it, enjoy this delicious dish with the chili sauce.
