Recipe For The Delicious Thiebou Dienn

This is traditional way of cooking the Thiebou Dienn, in this we make the paste of the garlic, onion, tomatoes, pepper in the pestle, then we add this to the big chunks of the red sniper fish, we fry the fish with the skin, then we fry the onions, yete in the pan, we add the tomatoes paste and the water to it, we add the cabbage, carrot, eggplant and other vegetables to it and cook it, we cook the rice in the microwave and add to the juice of the vegetables, then we served all the things.

Serves- 4

Ingredients:

Rice- 4 cups
Red Snapper fish- 4
Tomatoes- 4
Parsley- 1 bunch
Carrot- 1
Potatoes- 2
Onion- 1
Garlic- 5 cloves
Eggplants- 2
Cabbage- 1
Peanut oil- 200 ml
Bouillon cubes- 2
Bay leaves- 4
Pepper- 4
Black pepper- 1 teaspoon
Salt- as per taste
Okras- 4
Squash- 1
Yete- 1 tablespoon
Netetou- 1 tablespoon
Water- 1.5 liter

Methods Of Preparation:

Step 1

First we take the garlic, crushed it and peel it, we take the onion, peel it and chopped it very fine, now in the pestle we take paprika, along with the black pepper, then we add the 2 cloves of the garlic to it, now we make the paste of it.

Step 2

Now we take the red and green tomatoes, chopped it very fine, we take the leaves of the fresh parsley, we place all of this to the pestle and grind the whole thing to make the paste of it, if it is so dry then add the olive oil to it.

Step 3

Now take the red sniper fish it is quite big fish, now cut the tail and the mouth of it, clean the stomach of it, now cut it into big chunks, now take one chunks, take out the shells of it, now make the holes with the finger and fill the mixture in it as we prepare earlier, season it with the salt and pepper.

Step 4

Now take the deep pan, add the cooking oil to it, place it on the medium flame, now place the fish in it, now fry the fish for about the 15 minutes from both the sides, place this to the kitchen paper.

Step 5

Now in the same pan, add the onions and chopped garlic to it, now fry the paste of the yete in it for sometime, now add the boiled tomatoes to it, add little bit of the soy sauce to it, now add the water to it, cover the lid of it for about the 5 minutes.

Step 6

Now take the cabbage and the eggplant, cut it half, peel the carrot, squash and the potatoes to it, now as the mixture starts boiling add these vegetables to it, season it with the salt and pepper, now cover the lid and cook the whole things for about the 20 minutes, after the given time we add the fish to it also and boil it.

Step 7

Now we take the rice in the bowl, clean it properly in the running water, then we add little bit of the salt as per the taste and few drops of the olive oil to it, now place this inside the microwave in the microwave safe container and set the timer to the 10 minutes.

Step 8

Now take out all the things from lid to the another plate, now pour the mixture on the top of it, now in the sauce of it, add the cooked rice and netetou, now in the serving plate, add the red rice and on the top of it place all the vegetables on it. The dish is ready to eat.
