Recipe For The Delicious Vegan Curry At Home

This is the vegetarian dish, in this we fry the garlic, onion and ginger, then we add the lady finger to it, we add the ground cumin, coriander and fenugreek to it, then we add the tomatoes to it and cook it, we make the paste of the chickpeas, rapeseed oil, garlic and last we toast the cashew nuts in it.

Serves- 3

Ingredients:

Garlic- 2 cloves
Ginger- 1 root
Onion- 1
Cumin seeds- 1 teaspoon
Lady finger- 200 gm
Ground cumin- 1 teaspoon
Ground coriander- 1 teaspoon
Ground fenugreek- 1 teaspoon
Tomato- 4
Cashew nuts- 100 gm
Chick peas- 200 gm
Rapeseed oil- 50 ml
Pepper- 1 teaspoon
Salt- as per taste

Methods Of Preparation:

Step 1

First take the garlic, ginger and the onions, now peel it and dice it very fine. Now take the bowl, put it on the low heat, now add little bit of oil in it, as the oil is hot, add the cumin seeds to it, now fry it for some seconds, now add the onion, ginger and garlic to it, toss it nicely and fry it.

Step 2

Now take the lady finger, cut the top and bottom, now cut it into equal chucks, now as the onions are fried, add the ground cumin, ground fenugreek and ground coriander to it, season it with the salt and pepper, now mix it well, as the onions are soften add the lady finger in it, mix it well.

Step 3

Now take the tomatoes, cut it into quarters, now take out the seeds of it, now add this to the lady finger mixture and mix it well. Now add the water to it and leave the mixture so that it will bubble away. Add the fresh coriander to it.

Step 4

Now take the cashew nuts, put them in the hot pan, season it with the salt and pepper, add little bit of the oil to it, now toss it nicely and toast it. Now take the jar, add the chickpeas in it, now add the rapeseed oil in it, 1 clove of the garlic, season it with salt and pepper, now make the smooth paste of it.

Step 5

Now take out the chickpeas paste on the serving plate and make the layer of it, now add the lady finger mixture on it, now add the toasted cashew nuts on it. The dish is ready to eat.
