Recipe For The Delicious Winter Minestrone

This is the delicious dish with the perfect combination of vegetable and the pancetta. In this we first make the puree of the tomato, prepare the beef stock, then we chopped the pancetta and fry it, we chopped all the vegetables and then fry it, we add the pancetta, sweet potato, beef stock, tomato puree, bay leaves in it, we cook all the things, then we bake it with the cheese on it and we served it.

Winter Minestrone

Preparation Time- 10 Minutes
Cooking Time- 40 Minutes
Serves- 4

Ingredients:

Olive oil- 2 tablespoon
Carrots- 2
Celery- 2 stalks
Garlic- 2 cloves
Onion- 1
Pancetta- 40 gm
Sweet Potato- 2
Squash- 300 gm
Tomato- 4
Swiss chard- 1 bunch
Cannellini Beans- 1 can
Rosemary- 1 sprig
Bay leaf- 1
Parsley- 3 sprigs
Beef stock- 1 packet
Parmiggiano Reggiano- 100 gm
Salt- as per taste
Pepper- 1 teaspoon

Methods Of Preparation:

Step 1

First you need to take the tomatoes, clean it in the running water, now take the bowl, add the water and salt to it, put it on the low flame, cover the lid and then boil it for about the 5 minutes, now take it out drain the water, peel it, put it in the jar, now add garlic clove to it, get the paste of it, now take the sweet potatoes, put it in the bowl add the water to it and then boil it so that it will get half cooked.

Step 2

Take the hot water in the bowl, take out little part of it, crumble 1 beef stock to it, mix it well so that there will not be any lumps in it, now mix it with the remaining water, take the parsley chopped it, take the carrots, peel it and chopped it, take the celery and the onions, diced it also, take the squash, cut out the outer skin of it, now cut the it into small pieces, now mince the garlic clove.

Step 3

Now take the deep bowl, put it on the low heat, as the bowl is hot, add the olive oil to it, now take the pancetta, clean it and chopped it, now place this to the bowl, now fry it for sometime, as the skin is in golden color then take it out to the separated bowl, now take out the fat of it also.

Step 4

Now in the same bowl, add all the chopped vegetables to it, add the chopped half boiled sweet potatoes, season it with the salt and pepper, leave the mixture for about the 10 minutes, now take the Swiss chard, hold it from the back and pull the leaves of it and this to the bowl, place this to the bowl, mix it with the vegetables, add the tomato paste to it, mix it and then leave it for 3 minutes, so that it will get tender.

Step 5

Add the finely chopped tomatoes, washed peas, pancetta and the beef stock to it, now mix all the things, last add the rosemary and the bay leaves to it, cover the lid and cook it for about 5 minutes, stir the mixture regularly, make sure that there should be a nice thick paste of it.

Step 6

Now take it out to the baking tray, grate the parmiggiano cheese on it, like it will cover the whole area, place this inside the oven for about the 10 minutes, now take it out, sprinkle the chopped parsley to it, now served it. The dish is ready to eat.
