Herb Roast Pork With Vegetables Roasties And Apple Gravy

Ingredients Needed For Preparing The Recipe:

boneless pork leg roasting joint – 1 ¼ kg
chopped parsley – 2 teaspoon
chopped sage – 1 teaspoon
wholegrain mustard – 1 teaspoon
chopped thyme – 2 teaspoon + few extra sprigs
sprays of oil – 4
small potato – 6
prosciutto – 80 gram
carrot cut into lengthwise – 3 (cut across afterwards)
red onion, cut into wedges – 2
garlic clove – 12
celeriac, peeled and cut into 11 wedges – 1 small

For Preparing The Gravy

diced bramley apple – 1 small
corn flour – 2 teaspoon
savoy cabbage and peas – for serving
reduced salt chicken stock – 600 ml

Direction On How To Prepare The Recipe:

Step 1

Set the oven at 180 degree Celsius. Take the pork and remove its rind and fats. Clean such that you are left with a clean chunk of meat. Spread mustard on it with chopped herbs followed by seasoning with black pepper.

Step 2

Take prosciutto and place it on top of the meat. This is to protect the meat from the spot where the fat is cleaned.

Step 3

Take a large roasting tin and spray some oil on it. Place the pork in the middle of the pan. Place vegetables, thyme sprigs surrounding the pork. Spray once more and then cover the pan with a foil. allow the pork to get roasted for one hour and then increase the setting to 220 degree Celsius. Remove the foil and then spray once more and then roast again for 20 minutes more.

In the meantime, you can make the gravy. Take a big bowl and add some corn flour to it. Add some water and make a wet paste of it. Put this into a pan and heat for some time. Cook stirring until it becomes thick. Add apple to the paste and cook for 5 more minutes or until it becomes of soft texture. Make sure that it does not loses its shape.

Step 5

Now going back to the third step. Take the roasting tin and remove meat from it. Pour the juice and the gravy from the tin in another dish. Spray the last spray of the oil on vegetables and roast for 20 minutes more or until it becomes brown.

Step 6

This completes your recipe. Serve the pork in a platter with fresh vegetables and apple gravy.
