Recipe For The Monkfish Skewers and Pineapple Rice At Home

Thailand has the large fish market and there are so many of the varieties of the fishes that are available there. They have the delicious recipes of the fish. The monk fish is known to the best fish to cook it is so tasty. If the monk fish is served by the rice which has the flavour of the pineapple then this combination is very tasty.

Here Is The Process By Which You Can Cook This In Your Kitchen:

Monkfish Skewers and Pineapple Rice

Preparation Time- 15 Minutes
Cooking Time- 20 Minutes
Serves- 2


Monk fish- 400 gm
Rice- 200 gm
Pineapple- 1
Red onions- 2
Capsicum- 1
Asparagus- 6
Garlic- 2 cloves
Lemon grass- 10
Vegetable oil- 1 tablespoon
Soya sauce- 1 teaspoon
Tamarind- 1 tablespoon
Coriander leaves- 50 gm chopped
Shallot- 3
Kafir lime leaves- 6
Palm sugar- 1 tablespoon
Cumin Seeds- 1/2 table spoon
Paprika- 1 teaspoon
Brown sugar- 100 gm

Methods Of Preparation:

Step 1

First thing is to cook the rice and for this you have to leave your long rice into the salted water for about 9 minutes. Now take the whole pineapple and cut it into the two equal parts and then form the one part take out the pulp of the pineapple and then chopped it. Now chopped the red onions, capsicum, asparagus and the garlic.

Step 2

Now take the fry pan then put some of the vegetable oil into it and then put it on the low flame, now add the chopped onions, capsicum, asparagus into it and then toss it for 2-3 minutes, now meanwhile drain out the salted water from the rice and then put that rice in the pan and then add the pineapple into it, now add 1 teaspoon of the soya sauce and the 1 tablespoon of the tamarind into it and then toss it till the rice is cooked. Now chopped the fresh coriander and sprinkle it over the rice.

Step 3

To make the curry we should have the paste of the spices and for this we should have the cloves of the garlic, some lemon grass, red chilli, shallot, kaffir lime leaves, palm sugar, cumin seeds and the paprika. Now put all of these in a jar and then blend it so that a paste will be make and this paste is used in making the thick curry. In this paste you will have the sweet, salty and sour taste with the  goodness of spices.

Step 4

Now take the monk fish it is full of meat and then cut the fish into the small pieces, the size of the pieces is according to your wish. Make sure that you have already removed the outside membrane, that it just like the plastic membrane.

Step 5

Now take the fish and marinate with the mixture and then leave it for 1 hour so that the flavours will be absorbed by the monk fish. Now in every part make a hole and then place a lemon grass into this hole now add other fish part in it. Do this for all the monk fish. You will get the amazing lemon grass flavour inside as well as outside.

Step 6

Now in another fry pan add the brown sugar and the water till the colour is dark brown, keep stirring it regularly so that it will not stick to the bottom, now leave it so that it will be cooled, now cut the lemon and dip the pulp side of the lemon in the caramel and place it inside the grill with the monk fish till it is fried.

Step 7

Now take it out and then place it in a serving plate and in the rice is to be served with in the pineapple. The dish is ready and you can eat it with the caramelised lemon juice on it.
