Water – 1 cup
White sugar – 2/3 cup
Walnuts – 1/2 cup
Egg white – 4
Glutinous rice flour (Mochiko) – 2/3 cup
Mayonnaise – 1/4 cup
Honey – 2 tbsp
Large shrimp – 1 pound
Sweetened condensed milk – 1 tsp
Vegetable oil – 1 cup
Method Of Preparation :
Take a small saucepan and stir water and sugar in it. Bring it to a boil and then add the chopped walnuts. Boil it for 2 minutes and drain. Place the walnuts on top of a cookie sheet so that it dries up. The candied walnuts are done and will be used for garnishing the shrimp dish.
Whip the egg whites in a bowl till it gets foamy. Now stir the mochiko in till it forms into a paste.
Take a large skillet and heat some oil in it over high heat. Now dip the shrimps in the mochiko batter. The shrimps should be peeled and deveined. It is easy to peel and devein. Fry the battered shrimps in hot oil till it turns golden brown. It should take five minutes.
Remove it on paper towels in order to drain the oil. You do not want an oily dish so drain the excess oil.
Take a serving bowl and stir the mayonnaise, condensed milk and the honey. Add the fried shrimps and toss them to coat it with sauce. Sprinkle the cooked walnuts on top of the shrimps and serve hot.
