Today we are going to share a recipe with you which is our favorite and we are sure that it will be your favorite once you cook it. The recipe is called Bacon Wrapped Pork Medallions. It is basically pork tenderloin wrapped with a bacon. It tastes so yummy! It is a beautiful dish that you can make on a holiday or as a starter with few beers or wine. Here Is The Recipe Of Bacon Wrapped Pork Medallions With Lemon Garlic Butter Sauce:
Preparation Time: 10 Minutes
Cooking Time: 30 Minutes
Bacon – 8 slices
Garlic powder – 1 tbsp
Seasoned salt – 1 tsp
Dried basil – 1 tsp
Dried oregano – 1 tsp
Pork tenderloin – 2 pounds
Butter – 2 tbsp
Olive oil – 2 tbsp
For Lemon Garlic Butter Sauce:
Butter – 1 stick
Lemon juice – 2 tbsp
Crushed garlic – 3
Parsley – chopped
Method Of Preparation:
Preheat your oven to 200 degrees C or 400 degrees F. Preheating is the most important step when you are baking anything. So, do not skip this step. It is very important.
Now place the bacon in a skillet over medium heat. Cook it and turn it occasionally. It should be an oven safe skillet. Once it turns a little brown, keep it on the paper towels. It should still be flexible after cooking it. Now remove the bacon grease from the same skillet in which you cooked the bacon. Combine the seasoning salt, oregano, basil and garlic powder in a bowl. Set it aside. You would need this later in the next step.
Now wrap the pork with the prepared bacon strip. Secure it using 2 toothpicks. Make sure you wrap it well and secure it properly with the toothpicks. Now slice the bacon wrapped pork tenderloins between each of the bacon strips. This will give you the medallions. Dip both of the sides of the pork medallions in the prepared seasoning mix. Melt oil and butter in the same skillet and heat it over medium heat. Cook each of the medallions for about 3 minutes per side. Now you need to bake this!
Place the same skillet into the oven that you preheated. Bake till your pork is done. The pork should not be pink anymore in about 20 minutes. Keep a check on the medallions. It should not take more than 15 to 20 minutes to cook. You can use a meat thermometer to check the pork. The center temperature should be 63 degrees C or 145 degrees. Your Pork Medallions are ready to serve!
To make the lemon butter garlic sauce, take a saucepan and melt butter in it. Once the butter has melted on low heat, just add the other ingredients in it such as garlic, parsley, lemon juice, parmesan cheese, salt and pepper. It should take 3-5 minutes to make this yummy sauce. It is ready to serve with the bacon wrapped pork medallions.
