Chocolate Lava Cakes With Cinnamon Cardamom Cream:

For The Cakes You Will Need:
Dark cooking Chocolate 150 gm
Butter 90 gm, Flour 30 gm
Sugar 50 gm
Cashew nuts ¼ cup (optional)
Raisin ¼ cup (optional)
For The Cake You Will Require:
Milk 3 ½ cups
Cream ½ cup
Sugar 1 ½ cups
Cinnamon Powder ½ tea spoon
Cardamom Seeds 45 (crushed)
To prepare the cream first cook the milk on low heat until it’s reduced a bit. Add sugar and cream and again cook it for 5 minutes. Add ½ tea spoon of cinnamon powder and the crushed cardamom seeds in it. Stir it to mix well. Cool out side or in the refrigerator.
First break the eggs; separate the egg yolk and egg white in individual bowls. Melt the chocolate and butter in a double boiler. Take off the heat and whisk the flour and yolks.
In a separate bowl, whip egg whites, slowly adding the sugar in parts until it is firm but not stiff.
Fold gently in to the chocolate mixture. Add chopped cashew nuts and raisins. Now grease some cake moulds or ramekins with butter. Pour the cake batter in the moulds.
Bake it in the oven for 10-12 minutes until the outside is raised and cooked where as the inside is soft and gooey. Take it out of the mould and place on a plate. Serve it hot with the cold cinnamon cardamom cream.
To prepare the fine cinnamon and cardamom powder, first roast them and then grind them. It will produce super fine powder.
