8 chicken thighs with skin
2 large potatoes
8-10 cloves of garlic
2 green chilies
1 small piece of ginger
black pepper powder
½ cup Worcester sauce
2 tablespoons butter
salt and fresh coriander leaves
Methods Of Preparation:
Wash and pat chicken pieces completely dry. Squeeze one whole lemon and some salt over them. Crush green chilies and garlic into a paste and add them on chicken. Mix all spices with your hands. Marinate chicken in a covered container for at least an hour so that chicken absorbs the smell of the marinade. You need to keep chicken thighs with skin to maintain the juiciness of the chicken. The fat layer in between the flesh and the skin keeps chicken juicy.
Boil potatoes with jacket till the potatoes get soft. After that, remove the jacket and mash them properly. So that, there remains no lump. Pour Worcester sauce and little amount of water on mashed potato and mix well. Keep it aside.
Peel onion, garlic, ginger and grind them to paste. Grate mozzarella cheese and keep aside one cup of grated cheese separately. Chop fresh coriander leaves and keep them aside.
Now take a pan and heat it. Add 2 tablespoons butter on the pan. Melt them on low flame. Add chicken pieces on melted butter and fry them on low flame keeping the lid on till the chicken pieces get soft. When chicken pieces get soft just fry them on high flame for 2-3 minutes so that they get beautiful golden brown color. Now remove the chicken pieces from the pan and add 2 tablespoons olive oil remaining butter. Let the oil be heated. Then add the onion garlic and ginger paste in the oil. Stir continuously to fry the paste.
When the spices are well fried pour the liquid mashed potato on the spices. Add salt to taste. Stir everything continuously so that the potato does not get stuck at the bottom of the pan. Add chicken pieces in the gravy. Cook them in the gravy for 2-3 minutes. When you get the desired consistency of the gravy sprinkle some black pepper over them and remove it from oven. Sprinkle grated cheese on the hot gravy and keep the lid on. This heat will help the cheese to get melted. After 10-12 minutes remove the lid of the container and serve it hot with hot rice or fresh bread. Before serving it garnish this nutritious preparation with fresh coriander leaves.
