500 grams duck meat( breast portion)
3 bunches of spinach
5-6 cloves of garlic
1 small piece of ginger
1 red tomato
1/2 fresh cream
black pepper and salt
Methods Of Preparation:
Make cut duck breast into small boneless pieces. Marinate them with lemon juice, salt and black pepper for an hour. Duck meat needs marination to get soft.
Peel both onions. And make fine slices of onion. Peel and mince garlic. Grate ginger.
Chop tomato and keep aside. Slit 3-4 green chilies and remove seeds. Chop fresh coriander leaves and keep them aside. Keep coriander and green chili aside for marination purpose.
Blanch spinach slightly. Add them to blender and blend them to paste. Your green sauce is ready.
Add 2-3 tablespoons butter oil in pan. Let it heat. Add chopped tomato in the oil. Fry them till they melt. After that, add onion juliennes, minced garlic and grated ginger in the butter oil. Stir continuously to fry all these spices. When they are well fried, add duck meat in the spices. Add salt to taste. Mix well and pour little amount of water on the meat. Mix everything by stirring and cook it on low flame for 5-6 minutes keeping the lid on. Check whether the meat is tender or not. If not, prolong the cooking time. After the meat gets tender pour the green spinach sauce over them. Mix well and cook them for 5-6 minutes keeping the lid on. After that, remove the preparation from the oven.
Pour the preparation in a container. Add fresh cream over them. Sprinkle some freshly ground black pepper over them. Garnish them with freshly chopped coriander leaves and green chili. Serve this tasty preparation hot with either steamed rice or with fresh bread. You will really relish it.
