Delicious Grilled Chicken Breasts With A Tangy Green Sauce

Chicken itself is a healthy and tasty food item. Among various preparations of chicken, grilled chicken is one of the most delicious items. 4 chicken breasts
2 tablespoons onion powder
1 tablespoon ginger powder
a few cloves of garlic
2 tablespoons dry rosemary
1 lemon
1 lime
a few strands of fresh parsley
olive oil
1 bunch of coriander
1 tomato
2 green chilies
and 1 tablespoon sugar.

Methods of Preparation:

Step 1

A long time marination is needed for the chicken to make it soft. Wash chicken breast properly and, then strain the water. With the help of a clean cloth soak out the excess water. Keep them in a bowl. After that, prick chicken breast with the help of a fork. Sprinkle salt, onion powder, ginger powder, oregano over the chicken. Rub properly on the body of chicken breast. Squeeze one whole lime over the chicken. Remove seeds if they fall into chicken because seeds of citrus frutis turn bitter if they come on contact of heat for a long time.

Rub lime peel on a grater and make lime jest. Chop fresh parsley. Now add chopped parsley, lemon zest and olive oil on the chicken. Peel 2-3 cloves of garlic and crush them. Add them in to the bowl. Pour 2-3 tablespoons of olive oil in the bowl. Mix everything with your hands. Now wrap the bowl with a cellophane paper. It will help to retain flavor of the herbs intact. Now keep the chicken along with its marinade in the refrigerator for a whole day long. But, if you want to keep chicken outside the refrigerator then 7-8 hours marination is sufficient.

Step 2

Now prepare the sauce. In a grinder add fresh coriander leaves (well washed). Chop tomato and chili and remove their seeds. Squeeze one lemon and eliminate seeds. Add tomato, garlic, chili, sugar, salt and lemon juice in the grinder along with fresh coriander leaves. Grind everything to paste. Now add 1 tablespoon olive oil in a pan. Heat it and pour the tomato coriander and garlic paste in the oil.

Keep stirring for 2-3 minutes. Taste the salt and sugar content of the sauce and then remove them from the oven. After removing it from the oven pour the lemon juice in the sauce. Now your sauce is fully ready. Lemon juice turns bitter when it comes in contact of heat. For this reason always pour lemon juice after removing the preparation from the oven.

Step 3

Grate one cheese and preserve the grated cheese.

Preheat the oven for medium high heat. Now place the chicken on the grille. Grill it for 8-10 minutes. After that, remove it from oven and sprinkle some oil and little amount of marinade on the chicken with the help of a spoon. Again grill them for 3-4 minutes. Check whether the red crust on chicken has come or not. If red crust has not come yet, it means, it needs more grilling. After that, again remove the chicken from the grille. Cover them with a heap of grated cheese and grill them for a minute or two. Keep them inside the hot grille for 5-6 minutes.

Step 5

Remove grilled chicken from oven and serve them hot with fresh salads and tangy sauce.
