Chicken And Baby Corn With Thai Rice With Shredded Chicken

Ingredients:

For Chicken:

400 grams boneless chicken
6 baby corn
1 onion
1 small piece of ginger
3-4 cloves of garlic
1 tablespoon corn flour
black pepper
tablespoons honey
1 lemon
salt
olive oil

For Rice:

150 grams of rice
½ star anise
2-3 lime leaves
1 teaspoon lime zest
salt
black pepper
1 cup shredded chicken (boiled) and olive oil

Methods Of Preparation:

Step 1

Cut chicken into small pieces. Marinate them in salt and vinegar for an hour or two.

Step 2

Cut baby corn into thin slices. Squeeze a few drops of lemon over them. Mix well and keep them apart.

Step 3

Cut onion, ginger and garlic into pieces and add them into the grinder. Grind them to paste. Squeeze the lemon and eliminate the seeds. Preserve it in a separate container.

Step 4

Mix corn flour and water in a container.

Step 5

At first make the rice. T0 make it, soak the rice grain in sufficient water for half an hour. After that, boil adequate water in a deep bottom container. Add tiny amount of salt and a tablespoon oil in the water. Boil it. Now add the rice in the water. Cook it till the rice grain gets soft. After that, strain the water. Now chop lime leaves and grind star anise. Heat 1tablespoons olive oil in a pan. Add the grinded star anise in the oil and make the oil fragrant. Add shredded chicken and stir them for 3-4 minutes to fry them lightly brown. Now pour the oil and chicken pieces in the rice. Add chopped lime leaves and lime jest in the rice. Add salt to taste and 1 teaspoon black pepper powder in the rice. Keep the lid on of the container and shake well to mix everything. Continue to keep the lid on so that the smell of lime and star anise mixed well with the rice. Your Thai rice is ready.

Step 6

Now heat some oil in a pan. Add onion, ginger and garlic paste in the oil. Stir well to fry the paste. Add the marinated chicken pieces in the fried spice and stir to mix them. Pour some water in the preparation. Keep the lid on for 20-25 minutes to make the chicken soft. After that, remove the lid and add baby corn slices. Pour the diluted corn flour and cook it till the required consistency of the gravy. Then pour the lemon juice and add the honey in the gravy. After adding corn flour, you have to stir the gravy continuously to avoid getting stuck at the bottom of the container.

Step 7

Sprinkle some freshly ground corn flour and freshly chopped coriander leave on sweet and sour chicken before serving it with Thai scented rice.
