Delicious Recipe Of Vegetable Fried Rice To Be Served With Cauliflower Cashew Curry

Hello friends! Today I am going to share two delicious veg recipes with you. One is Vegetable Fried Rice which needs to be served with Cauliflower Cashew Curry. Sometimes we often face a situation when we want to eat something which will be not contain chicken or fish but the taste must have to be delicious. Today’s dishes are such kind of dish which will definitely change your taste and mood. So friends, let’s start of making today’s delicious dish.

2. Cauliflower Cashew Curry

1. Vegetable Fried Rice:

This is a different style veg fried rice. We may have tried vegetable fried rice at home or at restaurants. But this one I am sure you have not tried yet. Let’s check how this different style veg fried rice to be cooked.

Vegetable Fried Rice

Preparation Time: 20 Minutes
Cooking Time: 15 Minutes
Serves: 2

Ingredients:

100 grams of long grain rice ( You can use brown rice as well to keep it nutrition value high)
10 grams of beans
10 grams of carrot
10 grams of green peas
1 gram white pepper powder
10 ml fresh cream
20 ml olive oil
1 gram of cardamom and Nutmeg powder ( You will get it at any departmental store. They are sold as powder only)
Salt as per taste

Method Of Preparation:

Step 1:

Wash the rice very well. Now soak it into water for 10 minutes. After 10 minutes, strain the water out and let it get dried for around 5 minutes.

Step 2:

Chop all the vegetables finely. Now take a bowl and boil 300 ml of water in to it. When the water will start bubbling, add salt and dried rice in to it. Cook the rice till they become semi soft. Now add the chopped vegetables in to it. Cook the rice till they become soft. Strain the excess water out.

Step 3:

Heat oil in a sauce pan. Now add the cooked rice in to it.  Add required salt, white pepper powder and cardamom and nutmeg powder in to it. Mix everything with the rice. Fry the rice on medium flame for 6-7 minutes.

Step 4:

Beat the fresh cream. Add this in to the rice. Mix it with the rice properly. Wait for 2 minutes. Switch off the flame.

Our Vegetable fried rice is ready. Now we will keep it aside and make the cauliflower curry which will be eaten with our rice.

2. Cauliflower Cashew Curry:

Cauliflower Cashew Curry

Preparation Time: 15 Minutes
Cooking Time: 15 Minutes
Serves: 2

Ingredients:

This recipe a bit of spicy one. However, you can make it less spicy by not adding cardamom. Let’s check what all ingredients we require to make this delicious cauliflower recipe.

1 medium size cauliflower
1 medium size potato
20 grams of cashewnuts
2 tsp chopped tomato
1/2 cup chopped capsicum
1 tsp chopped green chili
2 tsp chopped onion
5 grams green cardamom
1/4 cup of fresh yogurt
1/2 tsp of sugar
1/2 tsp of ginger paste
1/2 tsp of turmeric powder
4 tsp of olive oil
Salt as per taste

Method Of Preparation:

Step 1:

Cut the potato and cauliflower in to cube pieces. Take a bowl. Add water in to it and boil it. Now add little salt and the cubed cut cauliflower and potato in to it. Wait for 5 minutes. Now strain the water. Keep the cauliflower and the potato aside.

Step 2:

Heat oil in a frying pan. Now add the green cardamom in to it. When the nice aroma of cardamom will come out, add cauliflower and potato in to. Add salt, sugar and turmeric powder into the frying pan. Fry them on medium flame till they are golden brown. You can cover the frying pan with a lid to reduce the time of frying. After the cauliflower and potato are fried in golden color, take them out from the frying pan. Keep them aside.

Step 3:

Now add little oil in to the frying pan. Add ginger paste into it. Saute for 30 seconds on medium flame and then add chopped onion and chopped capsicum into it. Fry them on medium heat for 5 minutes. Add salt and sugar into it. When the onion will start removing oil, add fried cauliflower and potato in to. Mix them with the onion and capsicum. Saute for 5 minutes.

Step 4:

After 5 minutes, add cashew nuts in to it.Mix it with the cauliflower and potato mixture. Beat the yogurt to make it smooth. Add little salt, sugar in to it. Mix it with the yogurt. Now pour this yogurt mixture into the frying pan and mix it with the cauliflower and potato. Saute it for 5 minutes on low flame.

Step 5:

After 5 minutes sprinkle little water and chopped green chili and chopped tomato. Cover the frying pan with a lid and wait for 5 minutes on medium flame. When the gravy will become thick and heavy, switch off the flame. Our delicious cauliflower curry is ready. Serve it hot with our vegetable rice.
