1 tbsp Butter
Half cup of green onions, sliced
Two garlic cloves, minced
One cup of ricotta cheese
Half cup of sour cream
Two cups of Jack Monterey Cheese, Shredded
Ten corn Tortillas
One (19 Ounce) enchilada sauce, canned
One (10 Ounce) spinach, (thawed, drained off and squeezed dry)
Keep all the ingredients ready. Ensure to preheat oven to 190 degrees C (375 degrees F). Meanwhile, take a sauce pan and try to melt butter on it over moderate heat. While melting the butter try to make sure that the butter is not turning brown. Now, start adding onion and garlic and sauté for few more minutes until you notice fragrance. Add spinach and stir for at least five more minutes. Remove the ingredients from the heat. Now blend these with Jack Monterey cheese, ricotta cheese and sour cream.
Now take a skillet. And begin to warm one tortilla at a time for at least fifteen seconds. Now, place a quarter cup of spinach mixture on the center of tortilla. Roll these tortillas up. Now, place these tortillas joint side down in the baking dish.
Here comes the important step. Now, pour the enchilada sauce on it and ensure to sprinkle some Jack Monterey Cheese. Bake this for at least fifteen to twenty minutes in the oven that is already pre-heated. Once the given time frame is over, remove the dish from the oven and serve hot.
