Preparation Time: 40-45 minutes
Cooking Time: 30-35 minutes
500 grams boneless chicken
2 red chilies
2 ginger approximately 1 inch long
2-3 tablespoons honey
2-3 tablespoons vinegar
2 green chili
1 star anise
1 tablespoon rice flour
fresh mint leaves
Methods Of Preparation:
Wash boneless chicken and strain the water. Cut them into small pieces. Marinate them with salt and vinegar for 40-45 minutes.
In a grinder add onion, and grind them to paste. Keep them aside.
At first, boil some water and add red chili and tomato in the boiling water. Boil them for 5-6 minutes and keep them in hot water for further 8-10 minutes. Now remove them from hot water. Slit red chili and remove seeds. Remove the outer rind of the tomato. Now grind both red chilli and tomato to paste. Keep them aside.
Peel and grate ginger.
Chop green chili, eliminate seeds and keep them separately.
Chop fresh mint leaves.
Grind star anise to powder.
Mix I tablespoon rice flour in a cup of water. Be assured that there is no lump present in the mixture.
Heat 2-3 tablespoons oil in a pan. Add the onion paste in the oil. Stir onion paste continuously to fry it. Then remove boneless chicken pieces from the marinade and add them in to the oil. Stir to mix everything. Then add chicken pieces and grates ginger. Mix well and cook them on high heat for 4-5 minutes and then pour one cup of water over them. Check if you require more salt. Now keep the lid on and cook the preparation on a moderate flame for 20-25minutes to make chicken soft. Add tomato and red chili paste in the gravy. Cook it on high heat. After that add rice flour mixed water. Add star anise powder. Keep stirring because rice flour may stick at the bottom of the pan. When the gravy is thickened pour the honey over it. Stir to mix everything. Now remove it from oven and add chopped mint and green chili over them. Again keep the lid on for 7-8 minutes to mix the flavor of mint and green chili with the chicken. Your hot and sweet ginger honey chicken is ready.
Then serve this hot and spicy honey ginger chicken along with noodles or steamed rice.
