500 grams lamb meat (boneless)
2 large potatoes
2 large onions
10 cloves of garlic
10 red Mexican Chili
Methods Of Preparation:
Wash boneless pieces of lamb properly and pat them dry. Squeeze the whole lime on it but eliminate the seeds of the lime. Sprinkle some salt over them. Mix well and marinate the meat for an hour.
Peel potatoes and cut them into sizes that will go well with lamb. Wash them properly, rub salt over them and keep them aside. This will help potato to absorb the salt.
Keep tomatoes in the refrigerator to freeze. Then keep the freeze tomatoes in boiling hot water. It will help to crack the skin of it. Remove skin from the tomato. Removing skin from tomato is needed to get a smooth paste of it. Now slit Mexican chilies and remove its seeds. Boil them in little amount of water. It will help to reduce hotness slightly but will help to maintain the red color of it. After boiling them for 5-6 minutes, remove them from water and add in the blender. Add skinless tomato too in the blender. Now blend them till you get a smooth red paste.
Peel and chop both garlic and onions. Pour 1 or 2 tablespoons of olive oil on a pan and heat it. Add chopped onion and garlic on the pan. Fry them till brown. Then grind them to paste. Your spice is ready.
Heat 2-3 tablespoons olive oil in a deep bottom pan and add potato in the oil. Fry them till golden brown. Add lamb pieces also. Stir them for 2-3 minutes in the oil. After that, Add fried onion, garlic paste in the pan. Stir well to mix everything. After that, add tomato chili paste in it. Add salt to taste. Stir again to mix everything. Mix well. Pour 2-3 cups of water in the preparation and cook them on high heat till you get the required amount of gravy. Remove it from the oven and pour it in a container with a lid. At last, add 2-3 lime leaves in the gravy and keep the lid on for at least 10-15 minutes so that, the beautiful and appetizing citrus smell of the lime gets mixed with the meat.
