Cooking Time: 35 Minutes
Trimmed And Chopped Leeks – 4
Butter – 25 Grams
Cream Cheese – 100 Grams
Filo Pastry – 6 Sheets
Salmon Fillet (Skinless) – 2
Method of Preparation:
Heat the oven to 180 degree C or 200 degree C. Put the chopped leeks in a saucepan with 3 tablespoon of water and some butter. Cover it and cook for about 10 minutes till it gets tender. Remove it from pan and allow it to cool. Mix it with the cream cheese. You can also use creme fraiche for this recipe. Now add some seasoning.
Assemble the parcels now. Brush butter on the sheets of filo pastry. You need to keep 2 sheets on top of one filo pastry. Brush the butter between each of the layer. Place the salmon fillet at the center. Season it and spoon half of the leek mix. Fold the filo ends over the top and pull the sides and enclose it by scrunching together. Repeat it.
Now brush both parcels using melted butter. Grease a baking sheet and put the parcels on it. Cook for 25 minutes till the parcels get crisp and brown. You can serve it with a green salad and some mayo dip. Your salmon leek parcels are ready to serve.
