Chorizo Corn Chowder

Preparation Time- 10 Minutes
Cooking Time- 45 Minutes
Serves- 4


Potoates- 10 small
Vegetable stock- 1 packet
Onion- 1
Garlic- 4 cloves
Red pepper- 1
Chorizo- 300 gm
Corn- 400 gm frozen
Corn starch- 2 tablespoon
Picante sauce- 400 ml
Con queso salsa- 400 ml
Double cream- 50 ml
Parsley- 2 tablespoon chopped
Salt- as per taste
Pepper- 1 teaspoon

Methods Of Preparation:

Step 1

First, you need to take the potatoes, clean it properly in the running water, take the bowl, add the salt to it, add water to it, put it on the low flame, cover the lid and boil the potatoes for about the 10 minutes, so that it will get nicely cooked.

Step 2

After the 15 minutes, take the knife, insert it into the potato, if it is easily penetrates the potato, then drain the water from it, take out the potatoes, peel them and cut it into 4 equal pieces and keep them aside.

Step 3

Now take the red onion, peel it and chopped it very fine, take the garlic, crushed it, peel and chopped it, take the red pepper, cut it half, take out the seeds of it, now chopped it to the same size as the onions, take the hot water in the bowl, crumble the vegetable stock in it, mix it nicely, so that there will not be any lumps in it.

Step 4

Take the deep bowl, put it on the low heat, add the olive oil to it, as the oil is hot, saute the garlic and the onions in it for 30 seconds, as they become translucent, add the red pepper to it, fry all the things, keep stirring, now add the sliced chorizo to it, fry it again, till it become red in it, now add the corn starch, mix it with the vegetables.

Step 5

Slowly add the vegetable stock in it and keep on stirring, leave it for sometime, so that there will be stick gravy in it, now take the bowl, add the frozen corn in it, add normal water in it and leave it for sometime, so that it will come to the room temperature, now add this to the chorizo mixture, add the potatoes to it, mix all the things, add the picante sauce in it, cover the lid and cook it for 10 minutes again.

Step 6

As you see bubbles are there in the mixture, add the con queso salsa in it, mix it nicely and again cook it for sometime, now add the half cup of the double cream in it, season the whole thing with the salt and pepper, leave it for sometime, add the chopped parsley to it. Take the serving bowl, add the chorizo mixture to it, served it with the bread. The delicious chorizo corn chowder is ready to eat.
