Preparation Time- 15 Minutes
Cooking Time- 50 Minutes
Serves- 4

Ingredients:

Red chili dried- 10
Garlic cloves- 15
Cumin seeds- 1 tablespoon
Fennel seeds- 1 tablespoon
Coriander seeds- 1 tablespoon
Caraway seeds- 1 teaspoon
White wine Vinegar- 40 ml
Olive oil- 40 ml
Onion- 1
Tomato puree- 1 tablespoon
Freekeh- 150 gm
Vegetable stock cube- 2
Spinach- 100 gm
Honey- 1 tablespoon
Halloumi- 100 gm
Aubergine- 1
Yogurt- 5 tablespoon
Parsley- 1 teaspoon chopped
Salt- as per taste
Pepper- 1 teaspoon

Methods Of Preparation:

Step 1

First you need to take the hot water in a glass, crumble the vegetable stock to it, mix all the things well, so that there will not be any lumps in it, now you need to take out the seeds of the red chili, add them to the bowl, pour hot water to it and leave it for 1 hour.

Step 2

In the pestle add the caraway, coriander, cumin and fennel seeds, now make the powder to it, now sieve the red chili and preserve the water of it, in the blender, add the garlic cloves, add the small amount of red chili water to it, mix it to get a smooth paste of it.

Step 3

Now add the water soaked red chili in it, now blend this also, as you get a smooth paste, then add the olive oil and white wine also, again blend it, take it out to the bowl, the harissa paste is ready. Now in the bowl, add the boiling water to it, add the spinach to it, leave it for sometime, so that it will get tender.

Step 4

Take a deep bowl, put it on the medium flame, add the olive oil to it, now add the finely sliced red onions to it, fry the onions for about the 15 minutes, so that they will be nicely fried, add the tomato paste and the harissa paste, spinach, fry it also for about an minute, add the freekeh in it, fry it also, now add the vegetable stock to it, cover the lid and leave the mixture for about the 10 minutes, so that all the things will be nicely cooked.

Step 5

Take the bowl, add the honey, harissa paste, with the oil, mix it nicely, now take the aubergine and the halloumi cut them in slices, now take the pan, put it on the low heat, as the pan is hot, drizzle some oil to it, now brush the harissa mixture to each side of the aubergine and fry it from both the sides for about the 1 minutes, now do the same with the halloumi slices but make sure that it will not get burnt.

Step 6

Now take the serving plate, add the freekeh mixture on it, now place the aubergine and the halloumi slices on it, now add the yogurt on the top of it, season it with some black pepper, add chopped parsley to it and served it. The dish is ready to eat.
