This is the delicious dish for the vegetarians, it has the goodness of the sweet potatoes and the flavor of the vanilla, in this we first clean the sweet potatoes, then we cook it in the water, we then bake it in the oven, we peel and make the paste of it in the food processor, then we caramelized the sugar in vanilla beans, we prepare the mixture of the whipped cream, vanilla extract, we mix it with the sweet potatoes and fry all the things for in the coconut oil and then we served it.

Sweet potatoes- 4
Salt- 1 teaspoon
Vanilla beans- 3
Vanilla extract- 1 teaspoon
Double cream- 2 tablespoon
Brown sugar- 2 tablespoon
Cardamom powder- 1 teaspoon
Coconut oil- 1 tablespoon
Methods of Preparation:
First you need to take the sweet potatoes, put it in the bowl, add some of the water and 1 teaspoon of the salt in it, now leave it for some time, so that the skin of it will be clean, now take it out and poke nicely all over the sweet potatoes with the folk, now keep them aside and soak out with the tissue paper.
Now take the same bowl, add the water to it, add the sweet potatoes to it, put it on the low heat, cover the lid and cook the potatoes for 10 minutes, now you need to take the skewer, insert it in the potatoes, if it is easily coming out, then the potatoes is cooked other wise leave it for 5 minutes more with the covered lid.
Take all the sweet potatoes, cover all of them with the aluminum foil and then place them inside a preheat oven at 180 degree Celsius for about the 10 minutes, so that it will have the smoky flavor, now take it out, peel it, cut it in chunks and place it in the food processor to make the puree of it.
Now you need to take the pan, add the water to it, put it on the low heat, add the brown sugar to it, now stir it continuously, so that bubbles are there and the mixture will get caramelized, now you need to add the vanilla beans in it and fry it for 20 seconds, as the smell of the vanilla is coming out from it, take out the vanilla beans from the caramelized mixture, leave the mixture for sometime, so that the it will get cool down.
Now you need to take the bowl, add the double cream in it, take the whisker and whisk it gently, so that it will have the nice soft peaks on the top of it, now you need to add the vanilla extract in it, mix it and add this to the caramelized mixture.
Add 1 tablespoon of the coconut oil to the pan, add the sweet potatoes to it, now fry it for sometime, as the mixture is cooled, add the sugar and cream mixture in it, mix it gently, so that there will be a soft paste of it, now you need to take the serving bowl, add the mixture in it, sprinkle cardamom powder on the top of and served it.
