Although it is a simple noodles recipe but can be made amazing by combing it with various ingredients like grilled shrimp, bean sprouts, fresh herbs and rice vermicelli. It comes with a sweet and sour sauce.

White vinegar – ¼ cup
White sugar – 2 teaspoon
Fish sauce – ¼ cup
Canola oil – ½ teaspoon
Skewers – 2
Shrimp with shells – 8 medium
Red pepper flakes – ¼ teaspoon
Lime juice – 2 teaspoon
Chopped shallots – 2 teaspoon
Minced garlic clove – 1
Medium shrimp with shells – 8
Finely chopped lettuce – 1 cup
Rice vermicelli noodles – 1 package
Crushed peanuts – ¼ cup
Bean sprout – 1 cup
Finely chopped pickled carrots – ¼ cup
Chopped cilantro – 3 teaspoon
English cucumber that is chopped into 2 inch matchsticks – 1
Chopped daikon radish – ¼ cup
Chopped fresh mint – 3 teaspoon
Finely chopped Thai basil – 3 teaspoon
Direction On How To Prepare This Recipe:
You need a small bowl to start with. In the bowl, add together sugar, lime juice, vinegar, fish sauce, red pepper flakes and garlic. Mix all these ingredients together and pale aside for some time.
Into a small skillet, add vegetable oil. Place the skillet over medium setting. Add shallots to the skillet and cook for some time while stirring. Cook until the shallots become soft and turn caramelized lightly. This might take about some 8 minutes.
Now you need to preheat an outdoor grill. Preheat on medium heat and oil the grate lightly. Put about 4 shrimps in each skewer and grill each until thy turn pink in color and also become charred form the outside. You might need to continue cooking this for about 1 to 2 minutes. Finally set aside.
In this step, you need a large pot. Add water to the pot and place on high heat. Wait till the water starts boiling. Next, add vermicelli noodles to the water. Cook until it is softened. You need to cook for about 12 minutes. Once the noodles are cooked, remove from the heat. Make sure that you do not overcook the noodles else they might become extra soft and break from the middle. Next, when the noodles are removed from the water, keep under the cold water. Also stir while keeping the noodles under water as this is done to separate the noodles from the water.
Now you have to do one very important step that requires assembling the noodles. You have to take each serving bowl. When assembled, place the vermicelli noodles in one half of each serving bowl. Keep the lettuce and the bean sprouts into other serving bowl. Here comes the decorating part or you can also say the taste enhancing part. For this, you need to put cucumber, daikon, carrots, Thai basil, mint, cilantro and peanut on top. After this comes the caramelized shallot. If you don’t like to put it this way, you can also add all the toppings in one other bowl and mix followed by then top the noodles with it. On top of each bowl, place the shrimp skewer together with the sauce. Do add sauce on top of each bowl and toss the ingredients lightly to spread the flavor in every part of the recipe. This is also necessary to coat the ingredients before finally serving.
