This one is the juicy recipe to the grilled chicken. In this recipe, you have to prepare the marinade first, then pitta wraps followed by tzatziki, pitta and finally serve the recipe. Ingredients Needed To Prepare This Recipe:

Boneless, skinless, chicken thighs – 12

Ingredients Needed To Prepare The Marinade

• Dried oregano – 2 teaspoon
• Olive oil – 4 teaspoon
• Dried mint – 1 teaspoon
• Coriander – 1 teaspoon
• Ground cumin – 1teaspoon
• Ground cinnamon – ½ teaspoon
• Sweet paprika – 1 teaspoon
• Crushed garlic clove – 4
• Zest and juice from – 1 lemon + 1 lemon cut into wedges for serving

Ingredients Required For The Pitta Wraps

• Strong white bread flour – 250 gram
• Golden castor sugar – 1 teaspoon
• Fast action dried yeast – 7 gram
• Olive oil – 2 teaspoon + little more for greasing

Ingredients Required For The Tzatziki

• Greek yoghurt – 200 gram
• Cucumber – ½
• Crushed small garlic clove – 1
• Finely chopped small bunch of mint
• For juice – ½ lemon

• Chopped, seeds removed large tomatoes – 4
• Butter or round lettuce – 1
• Halved and thinly sliced red onion – 1

• Metal skewer – 4 long

Step 1

Take a large bowl and put the chicken into it. Add the marinade ingredients to this bowl with plenty of black pepper and 1 teaspoon of salt. Mix all these ingredients properly. Do ensure that the chicken thighs are well coated into the marinade. Cover the bowl now and place aside for 3 hours to chill. If you can, then allow to chill for 48 hours.

Step 2

Now you have to make the pitta. Do make pitta a few hours before you actually serve the recipe. For making pitta, take a bowl and add sugar, flour, yeast and about ½ teaspoon of salt. Add all these ingredients with your fingertips. Now add about 150 ml of lukewarm water and 2 teaspoon of olive oil to the bowl. Combine once more to give it the consistency of a dough. Once you have made the dough, keep it on the work surface. Knead once more for about 8 to 10 minutes. Clean the bowl first and then oil it lightly. Return the dough back to the oiled bowl and cover it loosely with the help of a cling film. Place this dough aside for 1 hour to rise or become double in size. Do wait till all this happens.

Step 3

When the dough is all done, divide it into four pieces. Roll each piece into circle. Roll each circle as thin as you can. Cover each rolled dough with a sheet of cling film that is oiled. Place aside once more to rise. You may keep aside for 20 to 25 minutes.

Step 4

Now you have to make the tzatziki. For this you have to take the cucumber and cut it lengthwise. Remove its seeds using your finger or some device. Chop the cucumber finely and combine it with the other ingredients that are taken for making tzatziki. Do add a pinch of salt for taste. Place aside or chill until it is finely used for serving.

Step 5

Now comes the cooking part. You have to heat the grill to the highest you can. Take a roasting tin and line it with the foil. Take 4 metal skewer that are long enough to be placed on top leaving fine space in underneath each. Now the chicken that you had kept into the fridge to chill, remove from there. Take the first piece of thigh and thread it over the 2 skewer. The skewer should go through it. Now take another piece of chicken and do insert it into the skewer leaving fine space between this and the first one. As you have taken 4 skewer, you should be able to fit 4 thighs in each one. Don’t worry, this is not as difficult as the skewer taken are long in size. Now keep the skewer on top of the roasting tin and place aside. Till then you can do the pitta.

Step 6

Now take a large frying pan and place over medium heat. Take the bread and brush each with oil. Gently lift one at a time and place into the pan. Make sure that it sizzles and bubbles appear from its sides. Do cook from each side for 1 to 2 minutes. Also, each side should turn golden in color. Continue till you are done with all the breads. As these are done, wrap each with a foil. To keep these bread warm, place into the bottom of the oven. Till then you continue with cooking chicken. If you want, you can cook the barbecue as well. This might take 5 to 8 minutes. Do keep on turning it from time to time.

Step 7

Now place the chicken under the hot grill and continue to cook for 15 to 20 minutes. Keep on brushing it with oil or any juice that comes from it and drops at the bottom of the pan. Also, keep on turning occasionally. Once these are cooked, remove from the oven and keep aside for 5 minutes approximately.

Step 8

Take each pair of skewer and cut the chicken pieces into half. Place these kebabs in a platter with warm bread, tomato, red onion, lettuce, lemon wedges and the tzatziki that you prepared above.
