You might be knowing that Thai recipes are very spicy but this does not covers for its amazing taste. Today, you are going to learn the recipe of light Thai green curry which comprises of several ingredients and spices as well. It will make an amazing winter recipe which can be served anytime with the long grain rice. Just go through the recipe and try how good you can cook. If you are fond of cooking then you may try making other changes also but just don’t change the ingredients.

Rolled oats – 25 gram (soaked in 200 ml of cold water for 20 minutes)
Coconut oil or sunflower oil – 1 teaspoon
Grated creamed coconut – 1 ½ teaspoon
Sliced carrots – 2
Small sweet potato – 1 (should be chopped into small pieces)
Parsnip – 1 (chopped into small pieces)
Marmite – ¼ teaspoon
Frozen peas – 50 gram
Lime – 1 (cut into wedges)
Kaffir lime leaves – 2 (fresh but dried)
Purple sprouting broccoli – 6 spears (cut into half lengthwise)

Ingredients Needed For The Paste:

Green chilli – 1
Roughly chopped sprigs onions – 2
Peeled garlic cloves – 1
Small pack of coriander – ½ chopped green pepper – 1
Peeled ginger – 2 ¾ cm big
Zest and juice from – 1 lime

Ingredients Needed For The Serving:

Small pack of coriander – ½
Brown rice

Direction To Prepare The Recipe:

Step 1

In the first step, you have to make a fine paste. For preparing the paste, mix all the ingredients in a bowl and mix properly. Pour the contents of the bowl into a food processor and grind until these ingredients make a fine paste or chopped thoroughly, transfer back into the bowl and place aside to chill.

Step 2

Now take the bowl in which you have kept oats for soaking. Now it is time to transfer the oats into the food processor. Don’t throw the water but pour into the same processor. Blend the oats until it becomes as smooth as you can. If you find any remaining oats, sieve through a sieve. Now add the creamed coconut into the blended oats and place aside.

Step 3

Now come the main step, in which you have to cook this mixture. On high setting, place a wok. Add coconut oil into the wok and allow to become hot. When it becomes hot, add carrot first, followed by sweet potato and parsnip. Stir all the three ingredients for 2-3 minutes. When these vegetables starts leaving a color, add the curry paste and allow to cook until there remains no water into the wok. Now it is time to add the above prepared oat milk and coconut mixture, finely chopped or as it is lime leaves, marmite and 300 ml of water. Stir several times to mix these ingredients and then reduce the setting to let it simmer. Cover the wok with a lid afterwards and then cook for some 15 minutes.

Step 4

After, add broccoli and about 50 ml of water. Cook again for 5 minutes or until the mixture becomes tender in texture. Finally add the frozen peas and stir cook for 1 more minute or until it becomes hot. Remove the pan from the heat and squeeze the juice from 2 lime wedges into the mixture. With this is completed your cooking part.

Step 5

Remove the wok from the heat and serve together with the brown rice. Place the remaining lime wedges aside and spread the coriander leaves on top or on the surrounding.
