It is easy to cook dish, first we half boil the rice, then we chopped the vegetables in it, we cook the vegetables in the rice, we clean the seafood and then we fry it in the white wine, we fry the onions in the butter, add the flour to it and cook it also, we add the mushrooms in it, we make it thick by adding the milk in it, we add the seafood to it, we add the rice to it, coat it with the cheese and bake it.

Preparation Time- 20 Minutes
Cooking Time- 25 Minutes
Butter- 20 grams
All purpose flour- 1 cup
Milk- 300 ml
Salt- 1/2 teaspoon
White pepper- 1/2 teaspoon
Bay leaf- 1
Mushroom- 50 grams
Seafood mix- 100 grams
White wine- 1 tablespoon
Rice- 2 cups
Carrots- 30 grams
Chicken Bouillon Cube- 2
Parmesan cheese- 30 grams
Parsley leaves- 4
Method Of Preparation:
First take 200 grams rice, wash it properly in clean water, half boil the rice over medium flame. Take 60 grams of onion and 30 grams of carrots, cut it into small pieces, then add both of them in same rice pot, crumble chicken bouillon cube into it. Distribute the vegetable on the surface that help to cook the rice evenly, do not combine the mixture but leave all the vegetable on top, cook the rice for another 2 minutes.
Now lets cook the white sauce for this take 100 grams of seafood, clean the stomach of all the seafood, soak them in salt water for 30 minutes, then rinse the seafood under the cold running water to help it thaw. Take a pan put it on medium heat and place the seafood into hot pan and distribute evenly, add 2 tablespoon of white wine and sprinkle 1/2 teaspoon of white pepper.
Cover the pan with the lid and cook it on low heat, till it cooked properly. Add 1 knob of the butter to the pan, put it on the low heat, as the butter is melted, add the 1 cup roughly chopped onion, saute it until the onion become golden brown.
Now take the all purpose flour, mix it with the onion mixture, add little bit of the water to it, stir it regularly, so that there will not be any lumps in it and also it will not get burnt at the bottom of the pan, cook the mixture over the low heat, so that the color of the mixture will be golden brown.
Now take 50 grams of shiitake and shimeji mushroom cut them into thick slices, add them into the same mixture and continue to stir-fry. When the mushrooms are coated with the oil evenly add 300 ml of cold milk into it. With the help of balloon whisk, combine the mixture continuously, when the mixture becomes smooth, add the bay leaf to it
When the sauce reaches the desired consistency as you want, season it with the 1/4 teaspoon salt and 1/4 teaspoon of white peeper, mix them properly then add the seafood mix. Stir and cook the seafood completely. Now, the whit sauce is ready. Further lets bake the seafood doria, add the butter to the mixed rice.
Lightly mix to combine and place the rice in a gratin dish then ladle the white sauce and ingredients onto the rice. Cover the sauce with Parmesan cheese and heat a toaster oven to 390 degree F, bake the doria for about 7 to 8 minutes until the surface is brown. Now remove the doria and garnish with parsley leaves and it is ready to serve.
