• Vegetable oil – 2 teaspoon
• Chopped onion –n ½ cup
• Cumin – ¾ teaspoon
• Chicken broth – 1 ½ cup
• Garlic salt – ¾ teaspoon
• Canned diced tomatoes – ½ cup
• Long grain white rice – ¾ cup
• Salsa – 1/3 cup
• Garlic salt – ¾ teaspoon
• Refried beans – 1 can or 16 ounce
• Plain yoghurt – ½ cup
• Minced garlic – 2 teaspoon
• Ground black pepper – ½ teaspoon
• Thawed and frozen cooked shrimp without tails – 12 ounces
• Mayonnaise – ½ cup
• Warmed flour tortillas – 6
• Pureed chipotle pepper with adobo sauce – 2 teaspoon
• Shredded cheddar cheese – 3 cups
Direction On How To Prepare This Recipe:
You have to start with placing a medium size saucepan on heat on medium setting. In the saucepan add some vegetable oil. Wait for some time till the oil is heated. After this, add onion and cook it while stirring. Stir frequently so that the onion is cooked properly and does not sticks at the bottom of the pan. Next comes rice. Add rice & season it with cumin. Stir to mix and then add ¾ teaspoon of garlic salt to the pan. Cook the mixture stirringly until the rice has become lightly toasted. This might take about some 5 minutes. Now is the time to pour the chicken broth and the diced tomatoes. Allow the mixture to cook until it starts boiling. When it does, cover the mixture and continue cooking for about 10 to 20 minutes on low setting. Make sure that all the liquid part of the mixture is gone by this time. If not then you might have to continue cooking it for some more time.
Now you have to take another saucepan but slightly smaller. To this pan, add the refried beans together with black pepper and ¾ teaspoon of garlic salt. Stir to mix all of these ingredients and cook over low heat. Keep on stirringly the mixture until heated and cooked properly.
In this step, you have to take a small bowl and add shrimp to it. To the shrimp, add garlic and heat until well-coated. Now place a skillet over medium to high consistency and coat it with cooking spray. This is done so that the mixture that is to be added in the skillet do not sticks at the bottom of the skillet. After this, sauté the shrimp properly. It should be heated thoroughly and must turn lightly brown in color.
Now you have to take a small bowl and add mayonnaise, yoghurt and chipotle peppers. Mix all these ingredients until they form a very smooth paste. Refrigerate this mixture until it is ready to use. Make sure that you don’t forget to use this in the recipe later.
