6 red lobster
3/4th inch ginger
2 cloves of garlic
2 green cardamom
6 red chilies
1 tablespoon butter oil
3-4 tablespoons vegetable oil
1 bunch fresh coriander leaves
salt and ½ cup full cream derived from coconut milk.
Methods Of Preparation:
De-shell and de-vein lobsters and wash them properly. Strain the water. Squeeze one whole lemon and sprinkle some salt over them. Mix well. Marinate them for at least half an hour.
Peel onion, ginger and garlic. In a grinder add onion, ginger, garlic and green cardamom. Grind them to paste.
Boil red chili for 8-10 minutes in water. Strain the water and eliminate seeds from the chilies. Then grind them to smooth paste. Your red chili paste is ready. Chop fresh coriander leaves and keep them aside for garnishing purpose.
Add 2 tablespoons vegetable oil in a pan and fry lobster lightly. Lobsters turn red as soon as they come in contact with heat. Remove them from pan. Now add further 2 tablespoons vegetable oil and let them heat. Add cinnamon and cloves in hot oil. Let them pop. Add the ground spice. Stir continuously the whole thing on a moderate flame. When the spices are well fried add the lobsters on the spice. Mix well. Add the red chili paste. Add salt to taste and pour water. Keep the lid on and cook them on a moderate flame for 20-25 minutes. This will help to make lobsters soft and the gravy will also get thickened. After the required time check whether lobsters are soft enough and gravy is thick enough. Check the salt. Now your red lobster curry is ready. Pour the cream on the gravy. Stir to mix and remove them from heat.
Garnish your lobster gravy with freshly chopped coriander leaves and serve hot with steamed rice.
