Bourbon Pecan Chicken is a mouth-watering dish, named after Bourbon Street in New Orleans. In this dish, chicken breasts are coated with a pecan breading, fried and then the crispy chicken is drenched in a rich brown bourbon sauce. Although this dish looks gourmet enough as if it came straight from a restaurant’s kitchen, it is relatively easy to prepare at home.

For Pecan Chicken:
Chicken breasts, skinless and boneless – four
Finely chopped pecans – quarter cup
Seasoned bread crumbs – quarter cup
Unsalted butter – three tablespoons
Olive oil – quarter cup
Eggs, lightly beaten – one
Salt to taste
For Bourbon Sauce:
Dark brown sugar – three tablespoons
Worcestershire sauce – one teaspoon
Dijon mustard – three tablespoons
Bourbon whiskey – two tablespoons
Unsalted butter – half cup
Low sodium soy sauce – half teaspoon
Salt to taste
Green Onions, sliced
Wash the chicken breasts and remove moisture completely by using paper towels. Cut each chicken breast horizontally, into two slices and pound them flat with a mallet to half inch thickness. Pounding helps chicken cook faster.
Mix the finely chopped pecans and bread crumbs well, add salt for seasoning and spread the mixture evenly on a flat plate. Dip each chicken slice in the beaten egg and coat thoroughly with the pecan- bread crumb mixture.
Place a flat skillet over medium heat and add the unsalted butter and olive oil. Fry each side of the coated chicken breast for about five minutes, until it turns golden brown in color. Repeat in batches, until all the chicken breasts are fried. Transfer the fried chicken to a plate lined with paper towels to remove excess oil. Keep aside.
Combine Dijon mustard, bourbon whiskey, Worcestershire sauce, soy sauce, and dark brown sugar in a pan. Simmer over a low flame till it thickens to a sauce consistency. Use salt for seasoning. Remove from heat and slowly stir in the butter cubes, one at a time and mix thoroughly.
Arrange the fried chicken pieces on a serving plate and pour the bourbon sauce over it. Garnish with sliced green onions and serve hot.
