Preparation Time: 15 Minutes
Cooking Time: 1 Hour
Servings: 4 To 6
Chorizo sausage: 6 pieces or about 400 grams
Chicken sausage: 6 pieces or about 400 grams
Yellow pepper: 1 piece
Red pepper: 1 piece
Onion: 1 piece
Celery: 2 medium sticks
Cherry tomatoes: 600 grams
Olive oil: 2 tablespoon
Garlic: 3 big cloves
Sweet smoked paprika: 1 and ½ teaspoon
Dried Thyme: 1 tablespoon
Fresh thyme: 2 sprigs
Cumin powder: ½ teaspoon
Black pepper: ½ teaspoon
Salt: to taste
Chicken stock cube: 1 piece
Aduki beans: 1 tin of 400 grams
White wine: 125ml
Chives: 1 bunch
Method Of Preparation:
Take a pan and heat 2 tablespoon olive oil. Fry the onion on slow flame until it turns translucent and tender. Cook for about 5 minutes and then add finely chopped celery. Mix in the chopped yellow and red pepper and cook for another 5 minutes, until the vegetable loses its raw smell.
Now it is time to add the sausages. Mix the chorizo and chicken sausage with the vegetables and fry for 6 to 7 minutes, until the sausage changes colour and is slightly fluffed up. Stir in crushed garlic along with dried thyme. Add the cumin powder, black pepper and some salt. Cook for some time until the spices release its aroma. You will notice the oil floating on top of the spice mixture and it is a clear indication that the spices are now fully cooked.
Slowly pour the white wine and stir well. Use a spatula to remove any residues sticking to the pan, allowing it to dissolve with the wine. Mix in chopped tomatoes along with fresh thyme. Reduce the heat, cover and let it simmer for some time. The tomatoes must be cooked until its raw smell disappears completely and it forms a thick, reddish gravy.
Open the lid and add the crushed chicken stock cube to the dish. This will make the dish even more flavourful. Cover again and let it cook. In about 40 minutes, the sausages will be completely done. Add the Aduki beans and cook for 5 minutes. Mix well and check whether the beans are perfectly cooked or not. Once done, sprinkle some black pepper on top and remove the thyme sprig from the casserole. Check the seasoning and adjust salt and pepper according to your taste. Tasty and delicious sausage and bean casserole is now ready to be served hot. Garnish the dish with spring onion greens and lay it out on the dining table for your friends and family.
