Scrumptious Green Chile Cheeseburgers Recipe

Chile pepper is the state vegetable in New Mexico and is quite popular in that region. But when you add them on top of beef patties, you can prepare an iconic dish called Green Chile Cheeseburgers. This is a unique cheeseburger with a distinct flavor due to the presence of variety of chiles in the form of a delicious relish, queso sauce and wonderful pickled onions.

Green Chile Cheeseburgers Recipe

Recipe Ingredients:

For The Queso Sauce:

All-purpose flour – 1 tablespoon
Unsalted butter – 1 tablespoon
Whole milk – 1 cup
Monterey Jack / Chihuahua cheese, grated – 12 ounces
Parmesan cheese, grated – ¼ cup
Ground black pepper – as per taste
Kosher salt – as per taste

For The Green Chile Relish:

Poblano Chile, roasted, peeled and thinly sliced – 1 medium
Serrano chile, roasted, peeled and thinly sliced – 1
Hatch chiles, roasted, peeled and thinly sliced – 2
Honey – 1 tablespoon
Red wine vinegar – ¼ cup
Extra virgin olive oil – 2 tablespoons
Cilantro leaves, chopped – 3 tablespoons
Ground black pepper – as per taste
Kosher salt – as per taste

For Pickled Red Onions:

Red onion, thinly sliced – 1 medium
Red wine vinegar – 1½ cups
Sugar – 2 tablespoons
Water – ¼ cup
Kosher salt – 1 tablespoon

For The Burgers:

Ground beef – 1½ pounds
Canola oil – 1 tablespoon
Ground black pepper – as per taste
Kosher Salt – as per taste
Yellow / blue corn tortilla chips, crushed – 12
Hamburger buns, light toasted – 4

Recipe Preparation:

Step 1

First of all, to prepare the queso sauce, heat a small saucepan on medium heat and add butter. Once the butter melts, add in the flour and cook while whisking constantly for a minute. Now add in the milk and cook on high heat while continuously whisking till the mixture is thickened slightly. This should take about 5 minutes. Remove the saucepan from heat and add in the cheese, Parmesan and pepper and salt. Once the cheese melts, mix everything together well to incorporate.

Step 2

To prepare the relish for the cheeseburger, mix together all the ingredients mentioned above along with the seasoning and mix well. Keep aside.

Step 3

To prepare the pickled onions, add water, vinegar, salt and sugar to a small saucepan and bring to a boil over medium heat. Once it starts boiling, remove from heat and allow it to cool down. Now place the sliced onions in a bowl and add the vinegar mixture over it. Cover the bowl and refrigerate for a minimum of 4 hours.

Step 4

To prepare the burgers, heat up a griddle and add oil into it. Shape the ground beef into round patties with a thickness of about 1½ inches and season with pepper and salt. Now cook the beef patties over medium heat till they turn golden brown of both the sides. This should take about 8 minutes.

Step 5

Now assemble the burgers by placing the patties on top of the toasted buns; then top with 3-4 tablespoons of queso sauce, followed by relish, pickled onions and chips. Place the top of the bun over the fillings and serve the burgers warm.
