Simple And Quick Lemon-Garlic Chicken With Mushrooms

Ingredients Needed To Prepare This Recipe

•    Boneless and skinless chicken breasts – 2 (weight around 8-10 ounces)
•    Fresh lemon juice – 3 teaspoon
•    Extra virgin olive oil – 2 teaspoon
•    Minced or pureed garlic cloves – 2
•    Freshly ground pepper and salt – as per the taste
•    Chopped fresh rosemary – 1 teaspoon
•    Sliced mushrooms – 1 pound
•    Canola oil or sunflower oil or grape seed oil – 2 teaspoon
•    All purpose or gluten free flour – 2 teaspoon (gluten free flour can be rice flour or corn flour)
•    White wine – ¼ cup
•    Fresh thyme leaves – 1 teaspoon or same amount of parsley

Before starting with the recipe, make sure that you have all the ingredients needed to prepare the recipe. As it might be your starting with this recipe, try to stick to the amount of ingredients that are mentioned in the recipe. Do not put more or less as per your wish.
In this recipe, you can do the chicken breast pounding job several hour before but make sure that you do not marinate long before and store in the refrigerator.

Step 1

You have to start with a large bowl. Take the bowl and add garlic, lemon juice, olive oil and rosemary to it. Stir to mix and then put salt and pepper. Stir once again to have the same taste in every part of the recipe. Now you have to take the chicken breast and cut each into 2 equal parts.  If the entire chicken breasts weights more than 10 ounces, prefer cutting into 3 parts. Once done, place each into the bowl. Stir once more and then you can transfer the bowl into the refrigerator for over 15 to 30 minutes.

Step 2

Now very carefully, you have to remove the chicken form the marinade. This is very important for further cooking. After removing the chicken from the marinade, you have to pat dry first and then discard the marinade as it is of no use anymore. Now on the your work surface, you have to place two big sheets of the plastic wraps. Overlap the two sheets to make it one. If the sheet is extra wide, then you will be needing just one.

Step 3

Take a brush and oil the sheet with few light stroke. Use olive oil for brushing the sheets. In the middle of the sheet, place the chicken and brush it too with olive oil. Once the brushing part is done, you have to cover the chicken piece with another piece of plastic paper. Do work on it from the center to the outside. Very carefully, you have to pound the chicken breast from the flat side of the meat tenderizer. Do this till it becomes ¼ inch thick. Make sure that you do not pound it too hard else it might tear form the end and you will be left with just few pieces to cook. Now you have to repeat the same method with the leftover chicken breast pieces.

Step 4

Now you have to season the pound chicken breast with some salt and pepper. However, keep in mind that you have to do this from one side only. One done with it, dip into the flour. Do not dip too much, make it light and do tap the breast part so that it removes the excess of the flour.

Step 5

Next, turn the oven. Take a heavy skillet and place over it. The setting should be high. Add some oil and wait till it gets hot. When hot, put one to 2 pieces of the chicken chunk into it. Although you may add more than one but make sure that you do not crowd the skillet. Cook the pieces for about 1 to 2 minutes. Do not overcook else it might become too crunchy or end up drying. When the bottom part of the chicken breast turns brown with few spots, turn to the other side to cook further. Cook the other side as well for 2 minutes or till it becomes brown in color. Once cooked, transfer into a sheet pan or a platter. This will help in keeping warm.

Step 6

Adjust the setting to medium now. You are now all set to cook some veggies. Start with mushrooms. Toss it few times to cook well. Let the mushrooms sear for about 30 seconds without stirring. Stir afterwards. Scrape the bottom of the skillet so that nothing sticks to it. Do this with the help of a wooden spatula. When the mushrooms have softened slightly or starts sweating, add some wine, parsley and thyme. Do add some salt and pepper as well. Toss to distribute the similar taste everywhere. Keep on stirring until all the wine has evaporated and the mushrooms have become really tender but should not melt. This might take about some 5 to 10 minutes. Finally put it over the chicken with the help of a spoon and serve to yourself, your family and your near and dear ones.
