Guinness is a name popular with the people of Ireland. Guinness has made its way into many dishes, such as bread, cakes and stews like this one. Guinness stew is Ireland answer to Belgian recipe carbonnade. It is made with large pieces of beef and with stout or ale. Also, the recipe loaded with root vegetables, like carrots, celery root, and parsnips. You can make the recipe in a slow cooker or in an oven.

All purpose flour-1/2 cup

Boneless beef chunks, cut and trimmed into 1 ½ -inch pieces

Large size yellow onion, thickly chopped- 1
Can Irish stout beer- 1 (15 ounces)
Garlic clove chopped- 4
Can beef broth- 1(14.5 ounce)
Fresh parsley, chopped- 1 tablespoon
Fresh thyme- 2 stems
Bay leaves- 2
Round red potatoes, cut in two- 1 pound
Carrots- 3 (cut into one-inch pieces)
Frozen puff pastry, cut and thawed into quarters- 1 package (17.5 ounces)

In a shallow dish add flour, salt, and pepper and mix them well. Add beef pieces. Let fly the pieces so that the mixture coat with all. Keep the remaining flour aside.
Take a large non-stick skillet, add oil and heat. Now, cook and blend the coated beef pieces till all the sides turn golden brown color. Follow the process in batches and takes 10 minutes to finish the process. Transfer all the cooked beef to slow cooker.
Using the same skillet, now cook and fry the onion for 5 minutes or till turns golden. Now, add garlic and beer, and boil both for one minute. With the help of a wooden spoon remove the browned bits sticking on the bottom of the pan. Now add the onion mixture to the slow cooker.
Add the following; beef broth, thyme, parsley, and bay leaves. Mix them with the cooked beef prices in the slow cooker.
Cook in low heat for 3 hours or till beef turns tender. Spray the balance flour mixture, mix well. Now, add carrots and potatoes.
Turn the heat high till potatoes turn tender in one hour.
Preheat the oven to 400 degree Fahrenheit.
Roll out the baking sheets and place puff pastry. With the use of a fork, pierce the piece man times.
Bake in the preheated oven till the pieces turn crispy and golden in ten minutes. Scoop stew into every single piece and top each with a pastry square.
