Here Is The Recipe For Southwestern Egg Rolls With Avocado Dip:

Serves: 5


Vegetable oil – 2 tbsp
Half chicken breast (boneless) – 1 (skinless)
Minced green onion – 2 tbsp
Minced bell pepper (red) – 2 tbsp
Corn kernels – 1/3 cup
Rinsed, drained black beans – 1/4 cup
Chopped spinach – 2 tbsp
Diced jalapeno – 2 tbsp
Minced parsley (fresh) – 1/2 tbsp
Ground cumin – 1/2 tsp
Chili powder – 1/2 tsp
Salt – 1/3 tsp
Cayenne pepper – 1 pinch
Monterey Jack Cheese (shredded) – 3/4 cup
Flour tortillas – 5
Oil for deep frying

Method Of Preparation:

Step 1

Firstly you need to rub the vegetable oil on the chicken breast. Just rub a tablespoon of oil on it. Now take a saucepan and keep it on medium heat. Cook the oiled chicken breast for 4 minutes per side. The chicken should not be pink and the juices inside should run clear. Remove it from heat and just set it aside. Make sure the chicken is cooked properly. It should no longer be pink.

Step 2

Now heat another tablespoon of oil in the saucepan on medium heat. Use a medium saucepan. Stir the red pepper and green onion and cook it for about 4 minutes till the vegetables are tender. You want the red pepper and green onion to be cooked but not burnt.

Step 3

Now dice the cooked chicken and mix it in the pan with the red pepper and onion. Mix in the corn kernels, chopped spinach, black beans, parsley, chili powder, cumin, jalapeno, cayenne pepper and salt. Cook it for about 5 minutes until the spices are blended well and just enough tender. Remove it from heat and stir in the cheese so that it gets melted.

Step 4

Now wrap the tortillas with a moist cloth and keep it in the microwave. Microwave for about 1 minute till it is hot and ready to eat. You need it to be warm and soft.

Step 5

Now spoon the chicken mix in each of the warm tortillas. Fold the end of each tortilla and roll it tightly around the chicken mix. Now secure it with the toothpick. Arrange it in a baking dish and cover it with plastic. Place it in the freezer. You need to freeze it for 5 hours or so.

Step 6

Now in a skillet, heat the oil. Now you need to deep fry the the egg rolls. Fry it on 375 degrees F. You should fry it for 10 minutes. It should look golden brown. Drain it on the paper towel so that the oil gets drained. Your dish is ready to serve!
